A delightful, practical collection of quick, easy and delicious gluten free meals and treats. These recipes consist of ingredients that most cooks stock regularly, no need to shop at a specialty store. Stars off with a basic overview of converting your family's favorite recipes to gluten free, then offers answers to how to convert your family's breakfast menus (the most starchy meal of the day for most of us!) to follow a gluten free diet. Offers a nice variety of recipes for dinners as well. A standout recipe for our family is Pan Poured Pizza. I especially love this because we have tried just about every gluten free pizza crust (premade, mixed, or recipe) and most mixes are a royal pain to stretch out on a pizza stone. Rachel's pan pizza recipe is INGENIOUS because the crust requires no rolling and wrestling, just mix it up and pour it into a 13 x 9 pan! The crust bakes up just as well as any I've fussed with rolling out, and my family loves it.
The Orange Chicken recipe is the only dish that includes rice that my boys have ever eaten without argument...they LOVE it! We also love Un-Lasagna and Easy Breezy Dinner Pie. I have not yet tried any of the cookie recipes yet, but several of them contain the secret ingredient that my family loves: chocolate! :)
