You might want to check youtube to see how foie gras is obtained before you buy it. It is obtained through torture. The ducks and geese are violently force fed an incredible amount of food until their liver becomes diseased, engorged and fatty. This is extremely painful and cruel.

A wonderful substitute to fresh foie gras! It is absolutly fantastic in both flavor and texture! My favorite thing to do is soak them in whole milk and honey for about an hour then saute them in truffle oil! Luxury at its finest! It is too bad that some people have the inconsideration to write innapropriate OPINIONS.

I bought this for Christmas for my wife who is from France. She was very surprised and said it was excellent. I would buy this Foie Gras again. This company sells different types of Foie Gras, they have a Grade A or B, they have de-veined and they have fully cooked. This was a Grade A which was not de-veined, but it only had 1 small vein in it which was very easy to remove. We spread this Foie Gras on toast and also cooked some on top of deer tenderloin & backstrap. I think this Fois Gras is the closest you'll get to the traditional French Foie Gras. It arrived in a styrofoam cooler box with 4 freezer packs in it and it was still cold when delivered. I give it a 5 stars and will buy it again.

My foie gras arrived quickly and fully frozen. I was able to easily separate it into two pieces to save one lobe for later. There was only the one connecting vein in the middle so prep was minimal.

The foie-gras arrived on schedule and well frozen. I planned on serving it Christmas Eve so I began thawing it Wednesday evening the 21. After removing the veins I cured the lobes in salt and brandy. I recommend Jacques Pepin's recipe from his "Christmas Celebration" dvd. I sealed the lobes in plastic wrap and foil but it was too late to serve them on Christmas Eve, so I waited until a pre-New Year's Eve party. I served the cured foie-gras with cherry jam and sliced baguette, along with some candied walnuts. It was gone in twenty minutes. Everyone complimented on the smooth texture and taste of the liver.

I will be ordering this from now on every Christmas.

i was just in france for 2 weeks in june. i was taught how to make TRUE terrine of foie gras by a family member...who is a chef.

he told me what to look for regarding the duck lobes...color. texture.

i was reticent to order online. but sinc ei live in the US, and not in france where one can buy fresh foie gras in about any open air market...i chose to take a risk and buy from this place.

i am most happy.

i got 2 lobes. yes....the porice of shipping is high. but the items must be fed ex'd to you overnight and remain frozen.

hence why i got 2 lobes...to make the shipping worthwhile.

one lobe was 1.4lbs...the other...1.8.

i have already made proper foie gras out of the 1.4lb lobe. it is wonderful. smells and teastes fresh. good yellow color....though true, not as dark as in france. but then again...this had to be flash frozen and shipped.

i WILL buy from the gormet foodstore again!
