Book Description

January 10, 1997
In Wild Fish & Game Cookbook, wildlife artist and chef John Manikowski combines his experiences in the wilderness and in the kitchen to offer 100 recipes for cooking fish and game, accompanied by his illustrations of creatures in the wild and stories of hunting and fishing.

From the Berkshires to Guatemala, from Scotland to Montana, Manikowski's hunting and fishing expeditions have brought him into contact with a wide range of fascinating people, animals, places, and --especially--good things to eat. Manikowski has fished for black bass in paradisal Lake Atitlan in Guatemala; shot caribou in the wilds of Labrador; and lost a marlin as big as a boat off Puerto Escondito in Mexico. He has made exquisitely detailed drawings of mallards, pheasants, striped bass, trout, and elk. And he has perfected the recipes he now shares: Sauteed trout with Morels, Striped Bass with Snow Peas, Canada Goose with Fiddle heads, Stewed Pheasant with Olives and Plums, and Wild Game Cassoulet.

In addition to his game dishes, Manikowski provides recipes for appropriate appetizers, sauces, vegetable accompaniments, and desserts, so entire meals can be prepared in remote wilderness cabins as well as at home using only this book. The Wild Fish & Game Cookbook also tells you how to prepare a smoker and a charcoal grill, how to bone and cure fish, and other tips for preparing game.

Manikowski makes a perfect guide to the world of wild fish and game--both in the wilderness and in the kitchen.

Editorial Reviews

Amazon.com Review

Wild fish and game are increasingly accessible thanks to the farming of fish, venison, and other beasts, and to modern transport that brings salmon, pheasant, or whatever you may desire, overnight from where it is raised to local markets around the globe.

John Manikowski goes after his own game--hunting for duck, pursuing caribou in Labrador, and fishing for marlin off the coast of Mexico. Besides hunting and fishing, he has been a journalist and a partner in two restaurants. He also has a masters degree in design. This helps explain the engaging combination of food, art, and stories in the Wild Fish & Game Cookbook. Recipes like Pheasant with Leeks and Pears, touched with champagne, Venison Goulash, or Sauteed Trout with Morels and Spring Onions can inspire anyone to head for field and stream. Manikowski's illustrations and hand-lettering, plus color photos, make this book a handsome gift.

5.0 out of 5 stars This is the best wild game cook book I have used yet., October 26, 1999
By A Customer
This review is from: Wild Fish & Game Cookbook (Hardcover)
I have been disappointed in many wild game cookbooks in the past. As a result I have started borrowing them from the local library to read and use first. When I started reading this book I knew I had to purchase it for my kitchen. The stories are entertaining, and the recipes are delightful. I love his suggestions for side dishes and drinks to accompany the maincourse. A must have if you enjoy eating and cooking wild game.

5.0 out of 5 stars More useful and better illustrated than Rebecca Gray's best, June 29, 1998
By A Customer
This review is from: Wild Fish & Game Cookbook (Hardcover)
If you like to read/collect outdoor cookbooks this is for you; and if you can collect the ingredients this is especially for you. If after collecting these ingredients, you wish to actually cook and eat your catch this really is your book -- try all the recipes for everything you've taken. He offers all the accompaniments for your meal.

Mr. Manikowski illustrations offer a better view of my fly box than I have -- and I tied them myself!

He also tells stories of his fishing and hunting exploits as well as I hope my friends do.

Fun to read and fun to cook from -- more useful and better illustrated than Rebecca Gray's best!

5.0 out of 5 stars This is a piece of art and a joy to use, April 15, 1998

This is a beautifully written book. For those of us who read cookbooks for pleasure as well as use them for food preparation will find a "two in one treat" here. Beautifully illustrated by the author. Delicious and artful recipes. I strongly recommend. I've given several to my "hunter" friends and they just love it.
