Book Description

1973
This book is for everyone who spends time outdoors-on extensive trips in the wilderness, or simple camping expeditions, or living in the country. It is a complete manual on wilderness cooking with appropriate recipes. As well as that, Wilderness Cooking instructs the reader on capturing the food to be cooked: by fishing and hunting, and by collecting it from edible plants. It goes on to demonstrate, with illustrations, methods of butchering game, cleaning fish, curing game and fish, and describes the Indian and Buckskin techniques of wilderness cooking which include mud baking and hot stone, bark container, open fire and pit cooking. There are chapters on bread making, soups, wilderness beverages and wildwood seasoning. Wilderness Cooking will be an invaluable handbook for any outdoorsman.

The best wilderness/outdoor cooking handbook that was ever published in the U.S., in my opinion. All you will ever need to know. All variations with sour dough, full details for fine baked goods using the campfire and your own pots. Preparing all the animals you might hunt to the fish you might catch is explained, with delicious recipes after the preparations, while you are out in the wild. You will want to try Rabbit with coconut sauce ,fresh or canned; I'll trade the prairie wolf stew for the braised rabbit in wine, thank you. You learn to cook without kitchen cookware if you have to, constructing substitutes for pots made of bark, or fine roasting in the pits you construct. From a really good 'squirrel soup to nuts' or cakes and desserts, the illustrations are handsome; and the recipes are well written and easy to follow, and can be used with all the modern conveniences at home if you wish. This is a great guidebook to use in teaching your children how to be resourceful and self-reliant when camping and/or hunting: outside of the malls and home cooking from their kitchen appliances. Many of these recipes came from folks living in the wilds and wilderness; the examples include native contributions from all over the World. B&W drawings; full index.
