For those looking here because you're looking to make Modernist Cuisine's Mac & Cheese, you've found the right product. This sodium citrate properly keeps the melted cheese and liquid solution silky smooth.

Not having a full chem lab, I've got no other comments on the purity or exact composition, but I know it works for the one and only purpose I (and I suspect others) bought it for.

According to info sent to me from the company (very prompt and complete response when I inquired, BTW), this powder is "trisodium citrate dihydrate".

It is one of the ingredients used to make oral re-hydration solution. "Sodium citrate" is the generic name that covers monosodium-, disodium-, and trisodium citrates, also known as "Food Additive E331".

Oral rehydration solution, according to the World Health Org, is:
1 liter clean water
13.5 grams of glucose (not just table sugar, which has fructose - shop around for best prices)
2.9 grams of sodium citrate (that's a generic name that covers several similar molecules), but specifically it is this stuff
2.6 g NaCl (sodium chloride, also known as common table salt)
1.5 g KCl (potassium chloride, a common no-sodium salt substitute)

I had never used sodium citrate, it is a derivative of citric acid, make mac and cheese so good and easy, place pasta in skillet, cover with water and cook until tender, (about 12 minutes) Use no butter, milk, or flour, push the cooked pasta to the side, stir in 1/2 tea spoon sodium citrate, put in the shredded cheese of your choice, using only the cooking water, stir in the cheese, and that is it, best tasting mac and cheese you will ever taste, the sodium citrate will keep the oils from separating from the cheese, even cheddar. you will wonder how you ever cooked pasta any other way, no need to bring 6 qts. of water to a boil.

As long as it is pure and does the job, I'll give it a 5 star rating. One point! It came in a two pound jar, even though I ordered One pound. At first I thought that there was an error, but it weight correctly. I'm using 1 TBS to smooth out the cheese in mac and cheese. JMC

I love this for cooking, preserving and canning. My only thought is they need a smaller container for 1 pound of Sodium Citrate. The container is large enough for 2 pounds. This price is lower than any other place I have checked! Quick delivery too.

Great for emulsifying fats and liquids (white ale mac and cheese, anyone?) or making your own cheese slices with, you know, actual cheese instead of the processed cheese food or worse, the "imitation processed cheese food" (a fake version of fake cheese?!?!) Just be careful of your cheese to liquid ratios as too little liquid will cause the sauces to solidify after cooling down.

We use this to reduce limescale in our dishwasher (basically as a water softener). It works.

Pros:
It does chelate calcium in our hard water and decreases limescale in our dishwasher

Cons:
I wish they sold it in larger quantities
