This powder is able to absorb liquid fats and turn them into powders. So far I have been able to make chocolate powder, olive oil powder and bacon oil powder with it. I think in smaller quantities it can also be used in milkshakes to give it some body and bulk.
The 1lb tub is quite huge, unless you're working with it on commercial scales it is plenty for the home cook. khymos.org has a whole bunch of recipes you can try with this compound.
While you're at it, get some xanthan gum too!
Be careful when removing the lid, however. The stuff is light as a feather and will go everywhere if you are not careful.
The easiest way I have found to mix your curious concoctions is use a food processor like a Ninja. Add your oil based product first and then add the Tapioca Maltodextrin. Don't be shy with the powder! You will need more than you think. Keep pulsing the food processor until you get a granular consistency. You don't want clumping. Add more Maltodextrin if needed. Taste and enjoy! I keep all of my powders in sealed plastic containers to control humidity. The powders last quite a long time as well, up to a month or so.

incredibly functional in a kitchen/bar when it comes to garnish (if i owned a bar i would charge an extra dollar for that sweetly salted rim, and people would pay lol)
