Book Description

August 1989
A cook's-eye-view of a typical windjammer cruise off the coast of Maine. It evokes the special ambiance of New England, the excitement of sailing a large vessel, the bracing salt air that sharpens appetites, and the groaning galley tables that are an essential feature of these vacations. The bountiful fare is cooked up on an old iron wood stove which takes special handling to operate. A story line of a week's cruise, plus many, many recipes. Windjammer Cooking also contains a 16- page field guide to many of the New England Windjammers.

Editorial Reviews

Review

"For anyone who enjoys simple down-to-earth cooking as well as the romantic windjammers, this is a must. As tasteful as the recipes is the segment on the windjammers themselves, for in this the reader is given a description of the ship, the wonderful old iron cook stoves and the weekly schedule for those who pay good money each summer to ply the waters off the Maine coast... Whether you are a practicing sea-goer or an armchair romantic, you'll get a lot of satisfaction from this book. As good as food tastes while on the water, there's nothing holding you back from trying some of these ambrosial delights in your own kitchen back on land. I think this deserves a place alongside your favorite cookbooks." -- Hale G. Joy, Book Review Editor, The Ellsworth American, January 1990

From the Publisher

This title celebrates one of the most unusual and authentic vacation experiences available in New England - coastal cruises aboard traditional sailing vessels with the opportunity of joining the crew in handling the ship.

4.0 out of 5 stars Home cooking with a maritime flair, January 4, 2009
By
This review is from: Windjammer Cooking (Paperback)
This book is part cookbook and part schooner trip souvenir from one of the first acknowledged cooks in the Maine schooner fleet. The first part of the book is filled with a basic how-to of the week's adventure on one of the fleet's schooners in the late 70's/early 80's before fresh water showers and diesel stoves. The second part is basic, tasty, made-from-stratch home cooking with the emphasis on easy, simple ingredients with a New England slant. Dee's stetches and notes bring a light humorous tone to the work and my copy of the book is much thumbed and food splotched on the buttermilk coffee cake, brownies and anadama bread pages. Many other cookbooks have been written for the fleet but you'll still find this book in all those schooner's galleys as a reference.

5.0 out of 5 stars The only cook book I ever really needed, May 30, 2007
This review is from: Windjammer Cooking (Paperback)
While working on a Maine windjammer as a "galley slave" (i.e. cook) during my college years, this and "The Joy of Cooking" were the only cook books in the galley. We managed to feed 35 passengers three delicious feasts a day using mostly "Windjammer Cooking." Some twenty years later, this book is still my cooking bible. I was delighted to see that it is still in print, as my original copy is quite stained and held together with a rubber band. The Lobster Bisque and blueberry coffee cake are my favorites and the sherried chicken and rice pilaf are also delicious. Friends are constantly asking for the recipes for these, good, old-fashioned dishes.
