The Wish-Bone Story

The Wish-Bone Story started almost 60 years ago thanks to a single recipe for Italian dressing and an ingenious American soldier.

In 1945, Phillip Sollomi opened a family-style chicken restaurant in Kansas City, Missouri and decided to name his place, "The Wish-Bone."

Phil's restaurant was an immediate success, but in 1948, he decided his restaurant was missing a certain...kick. He decided to ask his mother for the spicy salad dressing recipe she brought from her native Sicily. He thought his customers might like it. And they did. Today salad lovers can enjoy dozens of delicious Wish-Bone dressings with the salads they love.

Marinated Chicken Bruschetta

Serving Size 6 | Prep Time: 10 minutes

Marinate Time: 30 minutes | Cook Time: 12 minutes

Ingredients
  • 3/4 cup Wish-Bone Light Italian Dressing, divided
  • 6 boneless, skinless chicken breast halves (about 1-1/2 lbs.)
  • 2 medium beefsteak tomatoes, chopped
  • 1/4 cup diced red onion
  • 1 Tbsp. finely chopped fresh basil leaves* (optional)
Directions

Pour 1/4 cup Wish-Bone Light Italian Dressing over chicken in large, shallow nonaluminum baking dish or plastic bag. Cover, or close bag, and marinate in refrigerator, turning occasionally, 30 minutes to 3 hours.

Meanwhile, combine tomatoes, onion, basil and 1/4 cup Dressing in medium bowl. Cover and marinate in refrigerator at least 30 minutes.

Remove chicken from marinade, discarding marinade. Grill or broil chicken, turning once and brushing frequently with remaining 1/4 cup Dressing, until chicken is thoroughly cooked, about 12 minutes. Serve tomato mixture over chicken.

This light Italian dressing by Wishbone is delicious! It goes well with just about any salad I ever make and that's saying a lot because I love salads with spinach, Boston lettuce, romaine lettuce, iceberg lettuce and more! It's great that the calories are few and the taste is really zesty; there's very little fat and that's another plus.

However, this salad dressing isn't necessarily perfect. There seems to be some controversy in the medical world about the use of modified corn starch for some people and Amazon mentions that high fructose corn syrup is an ingredient in this salad dressing but then again I don't see it listed on the back of the bottle with the other listed ingredients. Bottom line: If you have concerns about your diet ask your doctor before using this salad dressing.

Overall, this light Italian salad dressing by Wishbone tastes great and cuts down the calories and fat--a most welcome feature! I enjoy it quite a bit on lots of salads.

I bought these thru warehouse deals to marinade chicken to barbeque during the summer. I just opened up a bottle the other night and had chicken marinating for a few hours before grilling. The chicken tasted good when done and was nice and tender. Next I will try this on a salad but my main reason for purchasing is I do like Italian dressing on chicken.
