A Louisiana Classic, April 24, 2008
I own over 300 cookbooks, and this is one of the five that I use the most. It was a limited edition 75th anniversary publication offered to Entergy utility customers in 1997, and has since become one of those "classic" regional cookbooks. Many of the recipes had originally been included with customers' bills, back in the days when utility companies hired home economists to teach customers how to adapt to their new gas and electric stoves. As a displaced Louisiana native, I turn to it regularly for the recipes I grew up on. Although it has, like most other "community" cookbooks, a few entries of questionable taste and no discernible regional connection (Chop Suey, 7-Up Cake), it's also packed with almost 200 pages of authentic, easy-to-follow recipes for the Creole and Cajun dishes that Louisiana is justifiably famous for, from Calas to Crawfish, and no less than seven different kinds of Jambalaya. (My own copy automatically falls open to the page for Spinach Madeleine, a/k/a Spinach Casserole.)
While the spiral binding and paper covers probably won't hold up for long under frequent use (mine's starting to tear at the top) this is a rather hard-to-find title, and there's no sign that Entergy will be re-releasing it any time soon (perhaps for their 100th anniversary in 2022?)
