Wrapping It Up! is full of great information and great recipes. Whether you're a beginner in using a variety of whole-grain flours or a veteran of whole-grain cooking, you'll love this cookbook.
Vickilynn Haycraft opens the book with an informative section detailing the wrapper ingredients and then she moves on to explaining the very flexible techniques of making homemade wrappers. The great thing about her technique is that you need not have any extra kitchen equipment to turn out fantastic wrappers! She gives general instructions for all methods of making wrappers. She covers the kneading -- whether by hand or by mixer; the rolling -- whether by hand or by tortilla press; and the cooking of the wraps.
Then Vickilynn introduces a great number of innovative recipes featuring her wraps. Not only does she share the basic wraps that most people would expect (for delicious tacos and burritos), she goes on to share great ideas for using wraps in exciting, surprising and delicious ways. Her wraps are not just for tacos -- they make great "wrapwiches", casseroles, crackers and desserts, too.
In a nutshell, here are the things I appreciate most about the Wrapping It Up! cookbook --
1. Inclusion of a variety of whole grains in the recipes.

This is a great book for wrap recipes, which for people like me (post-college graduates trying to eat on a budget) is an invaluable resource. Healthy recipes that are filling and cost-effective: two thumbs up!

This book offers great recipes with easy to follow instructions on making your own wraps and what goes in them. My first batch of wraps from this cookbook came out better than any others I have made. It is worth getting the book for the Carob Peppermint Wrapper recipe, alone. YUM!
