This tool serves a vital role in the kitchen by realigning, or resetting, a knifes' edges, which bend this way and that when contacting a cutting surface. (Often called a sharpening steel, or butcher steel, a steel doesn't actually sharpen a knife--unless it's a diamond steel.) Consisting of a rod of hard steel-alloy and a tough synthetic handle, this steel works as well as any. A loop facilitates hanging it close at hand so the steel can be employed often: before each use is ideal to prevent a blade from becoming dull and prolong intervals between professional sharpenings. The rule is that a steel should be at least as long as the knife blade being drawn across it; this steel's 10-inch rod is sufficient for nearly all household knives. When that time comes that you need to touch up the sharp edge of your Wusthof knife the 10" steel is a good option. This is the deluxe Wusthof 10" inch steel it has a slightly larger shaft and more substantial handle.it can realign your knife edge quickly and easily. Honing steels are often confused as sharpeners. Your honing steel will realaign your knife edge but will not put a new edge on it. In trying to explain what a honing steel does try to imaging your sharpening steel and your toothbrush. It is a maintaince tool that you use everyday. In the case of your knife this would be maintaining the knifes edge. Now eventually you would need to see your dentist. That would be a sharpener. This would be a more detailed and agressive action and they would actually remove metal from the edge of the knife. Much like a dentist would do to your teeth. Now to maintain healthy teeth you brush everyday. To maintain a sharp knife you should steel your knife everyday. And remember only go to the Dentist(sharpener) once or twice a year.

This steel is just the right thing for honing blades right before using them (for more intensive sharpening use a stone). I only have a few objections:

- I own two steels, one obtained two years ago that doesn't have the washer-shaped metal guard between the handle and the shaft, and one obtained four years ago that does. The one that does has collected a lot of scratches on the guard. I can't help but wonder if hitting that metal has also hurt my blades.

- The wusthof logo is stamped onto the shaft, into the metal grooves, right where the tip of a blade passes. When honing a long blade I wind up holding the steel so that the blade doesn't hit the logo. (Those raised ridges can't possibly be good for the edge). But this means I only get to use half of the steel.

There are really two main competitors in the high-end mainstream kitchen knife market: Henckels and Wusthof. Those who have used both usually have a preference. My preference (and therefore bias you should know about) is for the Wusthofs.

The Wusthof Classic line is the more conservative counterpart to the Grand Prix line. The only difference, however, is the handle style. I personally prefer the Grand Prix, but this is an issue of personal preference.

However, when it comes to sharpening steels, I have found very little difference. As long as you buy a high end steel, you really won't go wrong. Therefore, I shop for this item on price, and Henckels has a price advantage. Unless you want a matching set, shop on price, and look to Henckels.

It took 22 years to wear out my original Wusthof Sharpening Steel. Their products are premium, world class and worth every penny. I value my knives highly and wouldn't consider any any knife manufacturer.
