The latest cutting performance tests carried out by the FGW (Forschungsgemeinschaft Werkzeuge und Werkstoffe e.V., a German research association for tools and materials based in Remscheid) confirm that Wusthof forged knives offer the best quality when compared to other well-known, single-layer brands.

The extensive tests were carried out in accordance with DIN EN ISO 8442-5. Wusthof knives have a considerably higher ICP (Initial Cutting Performance) and maintain this performance for an extremely long time (TCC = Total Card Cut).

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.
Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.
Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.
Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.
If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel.

My step father is a chef and has been using the Wusthof Grand Prix-II set for years. The knives really hold an edge and have perfect balance. I know my step father really likes the feel and shape of the handle also.
When my step fathers knives where stolen there was no question as to which knives we would replace them with. A set like this is really nice because these are the two most used knives for chefs and cooks, it really saves on the wallet when you can get both cheaper then they are singly.

I had this set shipped next day air as I start a cooking course on Monday. After reading reviews, I couldn't wait to get a hold of these knives.
When I got the package, I ripped open the box and was immediately impressed by looks alone. These babies look like serious business. I ran down to the store where I picked up some onions, carrots, and celery for the sole purpose of testing my new toys. I got back, halved/peeled an onion with the chef's knife and went at it. These things are sharp! I'm just beginning to learn how to cook and these knives made me feel like I'd advanced from where I was skill-wise. Using these makes everything quick and effortless. To say I minced those onions is a total understatement. After finishing with the onions, I turned to the carrots and celery, breaking out the paring knife to give it a go. I've never seen celery cut so finely. My dad (K. Leonard) and I took turns using the paring knife and we were both blown away by how well these knives were made. Not only are they sharper than anything we've ever used, they're balanced just right. I couldn't stop until I ran out of veggies to chop! I'd highly recommend these to anyone looking for a quality set of the two most frequently used knives in the kitchen.

These knives are my favorite. Everyone will have a knife they like better than others, and if seems like Henkels show up a lot. I prefer these because the blades feel a little better balanced and the handles fit my hand really well. The solid handles of the Grand Prix series don't have the ridges and rivets where crud can get stuck like the Classic line does. Also of note, the only difference between the Grand Prix I and II is the handles: specifically the little ridge at the end of the handle on the I that was smoothed out in the II. I actually prefer the I, but I have small hands. Those with larger hands will probably favor the later version, which is likely why they changed it. To my knowledge, though, everything else about the knives is the same. All in all, great blades. Sharp as razors, and easy to keep sharp with only period use of a steel. This set covers just about everything you'd ever need, though I ultimately complented it with a 4" utility knife as well.
