Product Description

Amazon.com Product Description

A thoughtful gift idea for any cooking enthusiast, this two-piece starter set consists of an 8-inch cook's knife and a 3-1/2-inch paring knife--two often-used styles in any busy kitchen. Use the cook's knife for a wide variety of cutting chores, from mincing and chopping to slicing and dicing. For enhanced convenience, its large blade surface can also be used to scoop and carry chopped ingredients to waiting pans or bowls. The compact size, pointed tip, and ultra-fine blade edge of the paring knife makes it the ideal tool for trimming fruits and vegetables and other handheld tasks. Overall, the cook's knife measures approximately 13 by 2 by 1/2 inches, and the paring knife measures approximately 7-1/2 by 1 by 1/2 inches.

As part of the Wusthof Grand Prix II collection, each knife's blade, bolster, and tang come precision-forged from a single piece of specially tempered high-carbon steel to ensure outstanding strength and balance. Wusthof knives offer sharp, precisely tempered blades for safe, efficient use. Laser tested for accuracy, the unique, compound angle of the blade tapers from the spine of the knife to the edge to create a sturdy, yet extremely sharp cutting surface. Another thoughtful detail includes the hygienically seamless, full-tang, synthetic handles, which are ergonomically designed for a secure, comfortable grip. Made in Solingen Germany, "The Cutlery Capital of the World", Wusthof knives carry a lifetime warranty and should be hand washed for best results.

PEtec--Precision-Edge Technology

New Wusthof technology offers superior sharpness!

The latest cutting performance tests carried out by the FGW (Forschungsgemeinschaft Werkzeuge und Werkstoffe e.V., a German research association for tools and materials based in Remscheid) confirm that Wusthof forged knives offer the best quality when compared to other well-known, single-layer brands.

PEtec

The extensive tests were carried out in accordance with DIN EN ISO 8442-5. Wusthof knives have a considerably higher ICP (Initial Cutting Performance) and maintain this performance for an extremely long time (TCC = Total Card Cut).

When compared with the winners in the "cook's knife" category awarded by German consumer organization "Stiftung Warentest" in its 1st edition of 2008, forged Wusthof knives featuring the new PEtec technology produce a result which is about 20% higher.

The Technology:

  • Blades are measured by a laser before sharpening
  • Computer programs calculate precise sharpening angle for each blade
  • Knives are then sharpened on a whetstone using precision robots
  • Knives are given a final polish using a special disc

The Benefits:

  • Extremely high initial cutting performance
  • Exceptionally long edge retention / long service life of blade
  • Optimum cutting edge along the entire length of the blade
  • Unique, consistently high and reproducible quality

PEtec from Wusthof--superior sharpness for professional and home cooks!

How Wusthof Knives are Made

Wusthof knives are known for their outstanding sharpness. By honing and sharpening the knives yourself you can maintain this feeling for a lifetime of use (see "Honing and Sharpening" section below for detailed guidelines on how to do so).

Evolution
The evolution of a precision forged knife

Over 40 different manufacturing steps are needed to produce a forged Wusthof knife from one solid piece of steel.

Here you will find a detailed explanation of some of the most important production steps.

1. Sheet bar of high-carbon no-stain steel
2. Precision forged piece
3. Tempered to 58-degree Rockwell
4. Polished
5. Scales of handles and rivets
6. The Wusthof Cook's knife

Types of Blades

The Right Blade for Every Purpose

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.

The Differences:

Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.

Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.

Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.

Cleaning & Storage

Proper care for long-lasting cooking enjoyment

If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel.

Wash

For proper storage we recommend the following options:

  • Knife blocks in a variety of shapes, colors and configurations. The handy knife block provides protection for your blades as well as a visual compliment to your kitchen decor.
  • Magnet Bars in wood, synthetic material or aluminum. Two extra strong magnet segments provide a safe, easily visible and space-saving storage option.
  • Cook's cases in rolls and briefcase styles. This is the ideal method for professionals to store and transport their tools safely.

About Wusthof

Since 1814 Wusthof has set the standard for designing and manufacturing precision-forged knives.

Today the family business is in its seventh generation of ownership, under the management of Harald Wusthof.

Wusthof knives are manufactured by a skilled team of 300 dedicated workers in two state-of-the-art facilities in Solingen, Germany.

Wusthof applies sustainable practices to their production facilities: Solar panels on the roof provide electricity to their manufacturing facility, they clean and reuse water to reduce water usage, and they reuse scrap materials rather than creating waste.

In addition to knives, Wusthof offers an assortment of cutting boards, knife blocks, kitchen tools, and scissors bearing the famous Trident logo--a symbol of form, function, and uncompromising quality.

Product Description

If you could choose only two knives to use time and again, it would surely be these: a 3.5-in. paring knife and an 8-in. cook's knife. The paring knife makes small cuts, peels and trims away unwanted and undesirable spots on food. The cook's knife dices, slices, chops and cuts any number of items - a knife you will reach for each and every day. The Grand Prix II knives are precision forged of a single blank of high carbon stainless steel, skillfully honed by hand twice. The perfectly balanced knives feature molded handles that are slip resistant and completely hygienic. An update to the original line, the knives offer more ergonomically designed handles combined with the high quality and contemporary good looks chefs and home gourmets alike desire.

5.0 out of 5 stars Wusthof is great., January 7, 2008
This review is from: Wusthof 9655 Grand Prix II 2pc Starter Knife Set (Kitchen)
My step father is a chef and has been using the Wusthof Grand Prix-II set for years. The knives really hold an edge and have perfect balance. I know my step father really likes the feel and shape of the handle also.
When my step fathers knives where stolen there was no question as to which knives we would replace them with.
A set like this is really nice because these are the two most used knives for chefs and cooks, it really saves on the wallet when you can get both cheaper then they are singly.

5.0 out of 5 stars Great!, September 17, 2010

This review is from: Wusthof 9655 Grand Prix II 2pc Starter Knife Set (Kitchen)
I had this set shipped next day air as I start a cooking course on Monday. After reading reviews, I couldn't wait to get a hold of these knives.

When I got the package, I ripped open the box and was immediately impressed by looks alone. These babies look like serious business.

I ran down to the store where I picked up some onions, carrots, and celery for the sole purpose of testing my new toys. I got back, halved/peeled an onion with the chef's knife and went at it. These things are sharp! I'm just beginning to learn how to cook and these knives made me feel like I'd advanced from where I was skill-wise. Using these makes everything quick and effortless. To say I minced those onions is a total understatement.

After finishing with the onions, I turned to the carrots and celery, breaking out the paring knife to give it a go. I've never seen celery cut so finely. My dad (K. Leonard) and I took turns using the paring knife and we were both blown away by how well these knives were made. Not only are they sharper than anything we've ever used, they're balanced just right. I couldn't stop until I ran out of veggies to chop!

I'd highly recommend these to anyone looking for a quality set of the two most frequently used knives in the kitchen.

5.0 out of 5 stars Great knives, March 3, 2010

Amazon Verified Purchase(What's this?)
This review is from: Wusthof 9655 Grand Prix II 2pc Starter Knife Set (Kitchen)
These knives are my favorite. Everyone will have a knife they like better than others, and if seems like Henkels show up a lot. I prefer these because the blades feel a little better balanced and the handles fit my hand really well. The solid handles of the Grand Prix series don't have the ridges and rivets where crud can get stuck like the Classic line does. Also of note, the only difference between the Grand Prix I and II is the handles: specifically the little ridge at the end of the handle on the I that was smoothed out in the II. I actually prefer the I, but I have small hands. Those with larger hands will probably favor the later version, which is likely why they changed it. To my knowledge, though, everything else about the knives is the same. All in all, great blades. Sharp as razors, and easy to keep sharp with only period use of a steel. This set covers just about everything you'd ever need, though I ultimately complented it with a 4" utility knife as well.
