Any meat requiring a little extra cutting power will benefit from the laser-tested sharpness of Wusthof’s steak knife. This classically designed tool effortlessly cuts through pork, ribs, or lamb alongside the requisite beef. Measuring 4-1/2 inches in length, the razor-sharp blade curves to meet a piercingly sharp tip bringing added precision and dexterity.
This German-made blade carries Wusthof’s superior craftsmanship backed by a lifetime warranty. Three steel rivets securely hold the black, synthetic handle in place and give a traditional look. Producing strength and reliability, the blade, bolster, and tang are precision-forged from a single piece of high-carbon, stain-resistant steel. Knuckles remain protected, thanks to the steel bolster, while a molded handle with soft edges affords comfort and reduces hand strain. Although dishwasher-safe, hand washing is recommended.

The latest cutting performance tests carried out by the FGW (Forschungsgemeinschaft Werkzeuge und Werkstoffe e.V., a German research association for tools and materials based in Remscheid) confirm that Wusthof forged knives offer the best quality when compared to other well-known, single-layer brands.

The extensive tests were carried out in accordance with DIN EN ISO 8442-5. Wusthof knives have a considerably higher ICP (Initial Cutting Performance) and maintain this performance for an extremely long time (TCC = Total Card Cut).
When compared with the winners in the "cook's knife" category awarded by German consumer organization "Stiftung Warentest" in its 1st edition of 2008, forged Wusthof knives featuring the new PEtec technology produce a result which is about 20% higher.

Wusthof knives are known for their outstanding sharpness. By honing and sharpening the knives yourself you can maintain this feeling for a lifetime of use (see "Honing and Sharpening" section below for detailed guidelines on how to do so).

Over 40 different manufacturing steps are needed to produce a forged Wusthof knife from one solid piece of steel.

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.
Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.
Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.
Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.
If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel.

As a chef, I put my full faith into Wusthof knives and I love the Wusthof Classic. Although I have at least one or more of Global, Shun, Henckels and Mac knives, my wusthof knives get the most use. To each their own with which knife feels the best in their hand when in use, but I'll swear up and down about the Wusthof Classic handles. These steak knives are lightweight enough to use easily, yet have enough weight that you're unlikely to get careless.Although these steak knives shouldn't replace a paring knife, they double up as one for the larger fruits/veggies and make slicing an ease. If you're looking for knives at a low end of expense and don't mind buying new ones in a few years, look elsewhere. If you're looking for great steak knives that will last you a lifetime with numerous uses, look no further! They're worth every dime.

We've had these for about 4 or 5 years but still haven't used them! Why 5 stars? We've had them in the open about 3' above the ocean the entire time & there's not a speck of corrosion! Handles feel very comfortable & if our others ever give out we'll gladly use them.
