The curved edge of the this parer is for peeling or turning. Often known as a Tourne knife this blade shape is shaped so you can peel fruits and vegatable easily. The Wusthof Classic Ikon is culmination of all the best features of each of the Wusthof knife lines. The combined riveted handle design is combined with a contoured shape to add comfort and control. The Classic Ikon adds a rear bolster that acts as a counter balance when using the knife. This second bolster adds significant blade control. Classic Ikon has a unique forward bolster as well. The forward partial bolster is designed so you can sharpen the complete length of the blade. This bolster is also curvered inwards to allow your fingers greater control while holding the knife by the blade. Located in The Cutlery Capital of the World, Solingen Germany, the Wusthof factory history goes back as far as 1814 when the company was listed with the Duchy of Berg. To this day, the company remains family owned. Throughout it’s history, Wusthof has focused almost solely on the manufacturing of forged knives for the professional chef and home cooking enthusiast. Wusthof uses a special blend of German steel through out the whole length of the knife. The ingredients of this steel are proudly etched on each blade. Wusthof not only uses the best materials to make a fine knife, but it is also crucial that each blade is precisely tempered. This tempering allows the knife to hold its edge for an extremely long time, yet still be able to be maintained in your home kitchen with out the need to be sent away for maintenance. Our unique compound angle is not seen in many knives. This angle tapers from the spine of the knife to the edge to allow for a sturdy, yet extremely sharp edge while it also tapers from the bolster to the tip to give the knife strength as well as flexibility.

I am a culinary student at The Art Institute of Pittsburgh and part of our training involves the tourné cut. The standard straight-bladed paring knife is quite awkward for doing these types of cuts, and my Chef recommended a bird's beak knife for them. I had decided to try wusthof because of reputation alone and I am happy to report that this knife lives up to all the hype!

The blade is so sharp you can shave with it (I tested it on my forearm and there's a baby-smooth patch there now!), and it is so thin that it just glides thru whatever you are cutting regardless of the angle or curve you are making.

The handle is extremely comfy and easy to grip, and the bolsters (weighted parts of the grip) perfectly balance the entire knife. The entire knife is very durable and easy to clean and sanitize.

If you are debating weather to buy this knife, I can say that you should pick it up! I have owned a lot of knives and I liked this one so much that I a, buying the rest of the 9 piece set now!

Oh and as a student or traveling cook/chef, the standard wusthof paring knife blade guard fits this knife perfectly, so no worries there

First I should address the Wusthof brand and the Classic series of cutlery. My opinion is this is the best cutlery available from a reputable company that can readily address issues without waiting months as you would with limited production/handmade items and I believe they are every bit as good. This particular knife is a valued addition to any collection due to it's versatility and ease of handling. Notice the cutting edge is on the inside of the curved surface lending itself to any rounded or semi-rounded food surface that you are peeling. It will easily out perform a straight edge three or four to one! The Classic series of Wusthof is robust, long lasting (perhaps the rest of your days) and always has the famous Wusthof edge. I would recommend this cutlery to everyone that wants the best equipment in their kitchen. I am not a chef but I enjoy the confidence in using a finely engineered product regardless of it's application.

Perfect shape for peeling beets and other "hard" round raw things (works on potatoes too). Trade off is losing a bit more flesh of the vegetable (say 30% as opposed to 15% using a vegetable peeler), yet the benefit is much less risk of harm to your hands/fingers from slipping with a dull vegetable peeler!
