New Wusthof technology offers superior sharpness!

The latest cutting performance tests carried out by the FGW (Forschungsgemeinschaft Werkzeuge und Werkstoffe e.V., a German research association for tools and materials based in Remscheid) confirm that Wusthof forged knives offer the best quality when compared to other well-known, single-layer brands.

PEtec

The extensive tests were carried out in accordance with DIN EN ISO 8442-5. Wusthof knives have a considerably higher ICP (Initial Cutting Performance) and maintain this performance for an extremely long time (TCC = Total Card Cut).

When compared with the winners in the "cook's knife" category awarded by German consumer organization "Stiftung Warentest" in its 1st edition of 2008, forged Wusthof knives featuring the new PEtec technology produce a result which is about 20% higher.

Types of Blades

The Right Blade for Every Purpose

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.

The Differences:

Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.

Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.

Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.

Cleaning & Storage

Proper care for long-lasting cooking enjoyment

If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel.

Wash

For proper storage we recommend the following options:

If you are looking for a great set of quality steak knives, these knives are "the bomb" - I highly recommend them. The knife feels great in your hand and slices through meat like it's butter, requiring very little effort. The knives are quality made, balanced and sharpened to perfection. The hollow ground adds just enough of a countered surface that the meat slides off of the knife and doesn't stick while slicing.

To keep them in great shape and lasting a lifetime, always wash by hand (watch out they are sharp!) and never, ever put them in the dishwasher.

For home, these are way nicer than you'll find in most high end restaurants. They are very well finished, balanced, and cut through steaks with precision. If you've been to Outback Steakhouse, they are about 1/2 of the size and weight of their restaurant steak knives.

Look at the "Pro Series" of Wusthof knives for possibly the best deal in a matching, well-balanced set of cast knives. They've been the "house knives" in many restaurants and recently made available to home consumers. The handles are rubberized with safety grips. I bought nine different Pro Series knives with the classic steak knives and a 35-slot cherry Wusthof wood block. I couldn't be more pleased with the affordable combined quality. The 10 inch Wusthof ceramic "steels" work best for fine sharpening cast blades by using a 20 degree or less angle. That angle is about half or less of this large letter "V". It simply takes longer to sharpen forged blades.

The main difference in forged and cast is how long they hold an edge. It only takes 5-6 swipes on both sides to renew the factory edge to cast blades with the ceramic "steel". I figured if busy restaurant chefs can stop for a moment for a few sharpening swipes, I could live with it at home, and much better afford the bigger Wusthof set of the exact knives I preferred. The ceramic sharpener also looks and sounds cool in a home kitchen environment to guests. These are a huge improvement over most of my older Chicago Cutlery set that found a new home in my workshop. The other Chicago Cultery knives I kept in the kitchen fit very well into the Wusthof block.

After lots of research and buying a set of Wsthof knives that came with their lower end Gourmet Steak Knives, I feel as though these Steak Knives are the best you can get, both very sharp and cuts through steak like butter, the hollow ground is nice since the steak falls off the knife rather than sticking to it.
