Types of Blades

The Right Blade for Every Purpose

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.

The Differences:

Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.

Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.

Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.

Modern Manufacturing

With modern manufacturing techniques, Wusthof is using laser cutting to craft its stamped knives. Laser cutting is a technology that uses a laser to cut steel in precise shapes. Laser cutting works by directing the output of a high-power laser, by computer, at the steel being cut. The material then burns away, leaving an edge with a high-quality surface finish.

The remaining processes are similar to the manufacturing of forged knives.

Stamped knives are usually thinner, lighter and lack a little of the balance of forged knives; therefore, requiring a firmer grip and more pressure when chopping and mincing. They are usually priced lower than forged cutlery, because the process can be performed at incredible speeds and reduced labor and material costs. Cleaning & Storage

Proper care for long-lasting cooking enjoyment

If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel.

Wash

For proper storage we recommend the following options:

Each knife in this line is cut from a piece of steel using a laser beam to make a perfect blade. The best cheese tray is balanced in its array of scents, tastes, and textures. If you have a creamy Brie, you'll want a spicy blue counterpoint and a tangy, nearly flaky chevre to round out the board. To set out and sample the selection, you'll also need this offset blade: the 5-in. flat length makes it easy to cut neat wedges of Gruyere and Gouda, the etched sides deter semisoft cheeses from sticking, and the stepped handle makes it impossible to knock your knuckles on the cheese board after completing a slice..

Good knife but only for cutting hard cheese, softer cheese is better cut with a wire cheese cutter or the santuko knife.

I had been looking for a good quality cheese knife for semi-hard cheese and found this one and thought I'd try it. The knife works exactly as intended and is of excellent quality. If you are tired of your cheese sticking to the knife or don't like to use the cheap wire cutters, this is a great investment.
