Gourmet Cutlery Series

In the culinary world variety and preparing something outstanding is the key to success. Due to this, Wusthof offers more than 350 different kinds of knives to be able to provide the perfect knife for everyone. No matter which kind of blade and handle shape you are thinking of--Wusthof has the right knife for all your needs.

Types of Blades

The Right Blade for Every Purpose

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.

The Differences:

Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.

Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.

Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.

Modern Manufacturing

With modern manufacturing techniques, Wusthof is using laser cutting to craft its stamped knives. Laser cutting is a technology that uses a laser to cut steel in precise shapes. Laser cutting works by directing the output of a high-power laser, by computer, at the steel being cut. The material then burns away, leaving an edge with a high-quality surface finish.

The remaining processes are similar to the manufacturing of forged knives.

Stamped knives are usually thinner, lighter and lack a little of the balance of forged knives; therefore, requiring a firmer grip and more pressure when chopping and mincing. They are usually priced lower than forged cutlery, because the process can be performed at incredible speeds and reduced labor and material costs. Today, high-quality stamped knives deliver excellent cutting and ability and light-weight maneuverability favored by some cooks.

About Wusthof

A Tradition of Quality Since 1814

Since 1814, knives bearing the Wusthof name and the Trident logo have been crafted in the world's "Cutlery Capital" of Solingen, Germany. Today, in a state-of-the-art facility, that tradition of quality is ensured as old-world craftsmanship meets twenty first century production methods.

In addition to knives, Wusthof offers an assortment of cutting boards, knife blocks, kitchen tools, and scissors bearing the famous Trident logo--a symbol of form, function, and uncompromising quality.

A Commitment to the Environment

Wusthof applies sustainable practices to their production facilities: Solar panels on the roof provide electricity to their manufacturing facility, they clean and reuse water to reduce water usage, and they reuse scrap materials rather than creating waste.

The picture shows the set with the markings Solingen Germany on the knife and scissor blades. My set is missing those markings. There are no markings anywhere on the knife or scissors that indicate where they are made. The box is missing that information, as well.

The knife is also missing the geometric design to the right of the blade markings.

The sticker on the handle has sharp square corners, while the picture on the Wusthof site shows a red square with rounded corners.

This makes me concerned that they are no longer made in Germany.

The knife did not pass the newspaper test when new, and cannot be sharpened to pass the newspaper test. It does not hold an edge as well as my older (German) Wusthofs.

There are at least three versions of this knife, all with the same number. Two say Solingen Germany, but are marked a little differently. They appear to come from two different factories. And the one with no country marking at all.

Despite their site's claim "Made in Germany", Wusthof does admit that "they are really busy and have to outsource", but will not tell what country. Why would that be? And, of course, they mumble the usual evasive corporate drivel about quality control, specifications, standards, etc.

Interestingly, the prices are the same. It is up to the buyer to select the quality or country of origin he desires.

The scissors seem to cut OK, but we don't have very high standards for our general use kitchen scissors. They have metal teeth in the handles for gripping stubborn caps. The teeth are horribly out of alignment. They do not meet together, but on two different planes, about 3/16" apart. And the scissors are fairly flexible, owing to their light construction.

Have used the knife and scissors for several months now. both performing and holding up very well. hand-washing only, by choice. the picture shows a 4060/10 cm paring knife, but what comes is a 4022/8 cm paring knife. like i said, i like the 4022 just fine, but you are not getting what you think you are. the 4022 sells for 12.95 on amazon and the 4060 for 18.95. not that big a deal, but worth considering. the scissors are th 5888, as advertised.

Wanted a new pair of kitchen shears, and have had good luck with Wusthof in the past. Well the scissors are great, very sharp, crisp cutting, and when fully opened, the two sides come apart for easy cleaning every time.

As an added bonus, the small knife,(a touch smaller then average paring knife)if a great addition to our set too! Very sharp, feels great in the hand, and is perfect for quick small jobs such as dicing ham for omlettes, cutting cherry tomatoes, etc..

Both pieces are top notch for the price, and were well received as a gift by my wife, from me!

I have a few other Wusthof knives and think there is no better maker of kitchen cutlery. This 2-piece set was exceedingly inexpensive in comparison to the other Wusthof items I have purchased. The others that I own are the "Classic" line and this is the "Gourmet" line. The paring knife of this set is sharp. It appears to not have a full tang and feels less substantial than my "Classic" knives. I looked carefully at the packaging and the items and I was unable to find any indication of country of origin. I have only had these for a few days and so I really can't comment on their durability. I recommend this set at the sale price since it is so reasonable. Hopefully, these were made in Germany and have the characteristics I and many others have come to expect from this brand.

Pros:
-price
-shears easily disassemble for cleaning
-sharp cutting edges
-trusted name

Cons:
-"Wusthof lite" knife
-unknown country of origin

The scissors are functional and suitable for light-duty work, though the handles feel a little awkward, and I'm not sure these scissors would be up to serious dissection of fowl or anything like that. The knife is an unexpectedly nice throw-in: it holds a sharp edge and has been surprisingly useful. If I'd paid $52 (the putative list price) I'd feel kind of disappointed, but for $20 I say fine.

I needed a good pair of kitchen scissors. Two piece design for cleaning was a must. The scissors have worked better than expected. Sharp and sturdy. Easy to clean too.
The knife was a bonus, and we enjoy using it regularly.
