5.0 out of 5 stars This is one of my two favorite knives
I am a bit of a nut for kitchen gadgets, and I have to say that this is one of my two favorite knives (along with a 4" Henckels paring knife). It is both very sturdy and comfortable, but also light and thin, which makes a huge difference when cutting into things like butternut squash or large potatoes or root vegetables. It really is much better than most chef or...

3.0 out of 5 stars overall disappointed
This knife is a joy to handle and cuts like a dream as long as it is sharp. There's the problem. I have found that it doesn't hold and edge as it should. Even if I use a steel to align the edge before every use. I would/will purchase another brand of Satoku. Not Wusthof's usual quality.

2.0 out of 5 stars Disappointing, December 21, 2007

I ordered this knife for my mother as a Christmas present but returned it after seeing how cheaply it's made. Although I read the product description and knew it was designed as a more economical alternative to Wusthof's Classic line of cutlery, I decided to give it a chance because my mom isn't that much into cooking. I didn't test it out, but it's evident by the look and feel that the quality and craftsmanship is far below what I expected, and I'm disappointed in Wusthof for selling such a low quality product. I own several pieces from their Classic line of knives, including Wüsthof Classic 7-Inch Hollow Edge Santoku Knife, and absolutely love them. So, don't be scared away from the Wusthof name, just stick to the Classic line and don't buy this knife.

It is both very sturdy and comfortable, but also light and thin, which makes a huge difference when cutting into things like butternut squash or large potatoes or root vegetables. It really is much better than most chef or santoku's, IMHO.

As to sharpening, I use an Aladdin Knife sharpener, a wall hanging unit which works very well with this and all my knives. It is not a purist's tool, but it works just right for me. It only needs sharpening about once a month for me, and does very well.

I bought this knife a few months ago and started using it with gusto. It was fun and a welcome change from the other knives I was using. But I noticed that within a couple of months, the edge has become dull. It still cuts carrots etc relatively easily but it is dull enough not to get the initial cut - like the edges of onions or carrots. So I find myself using a serrated knife to start the process and then start using this one.

So, I am disappointed and I use this only randomly on veggies that were already easy to cut before I got this knife.

I bought this to complete my series of beginer knives, i like it a lot, I disagree with other reviews, the edge is nice and if you use the chaira even better, but i must recognize that this knife is thin, but wusthof is clear in it description, is a beginer's knife, if you want something more sturdy get the classic series if knives. otherwise i love it.

5.0 out of 5 stars An awesome knife, November 21, 2008

This knife has all but replaced my collection of chef's knives. It cuts everything from cheese to tomatoes effortlessly and smoothly. It keeps its edge well and only needs a touch with the sharpening steel every few days to maintain that edge.

Highly recommended.

5.0 out of 5 stars A good quality knife, March 28, 2008

My wife had been wanting this knife for a while, so I ordered this for her for Valentine's Day. She's an avid cook, so this knife has already gotten a lot of use. So far, we don't have any complaints!

Also, this may be obvious, but the blade of this knife is incredibly sharp! My wife has already nicked her finger once or twice ;)

When this knife arrived, I was excited, but then soon my heart became disappointed when I realized that this is a cheapened version of the Wusthof Classic set. The steel does not go through the entire knife. It cuts OK, but it is not the classic. One has to look very hard in the picture to see the difference. The title of the knife does not tell you that this is the cheaper version.

5.0 out of 5 stars What a Knife!!!!!, February 20, 2011

I was skeptical when I first ordered this knife. I tried to find a knife that would stay sharp over the years only to be disappointed after spending as much as $200. on one knife. When I recieved my Wustof Gourmet 7 inch knife I tried cutting just about everything type of food with amazing results. No efforts cuts like a razor. slices thick or thin you decide and it will do it. LOVE IT!!!

5.0 out of 5 stars A kitchen must-have, September 22, 2010

The Wusthof 4188 Gourmet 7-inch Hollow Cut Santoku Knife is the perfect slicing/dicing/chopping tool. The handle is contoured comfortably, and the blade is capable of slicing sliver-thin to thick, depending on your preference. It's in constant use in my vegetarian household, and has performed beautifully with a variety of fruit and vegetables. The Amazon price is well below retail. I'm delighted with my purchase, and expect it to perform well for many years.
