This knife is very sharp and holds an edge extremely well with little effort. The thin blade makes cutting hard and soft vegetables a breeze - even tomatoes and potatoes. The shape of the blade also makes it easy to scoop the vegetables up so you can move it to the bowl or plate or pan - and it holds a lot.

I am very pleased with this knife and plan on buying the special sharpener that goes with it, as I expect to use this frequently.

basically I just want to warn folks to look carefully at the difference between the Gourmet series and the classic series of knives.. both are pricey with the classic usually, but not always, a bit to a lot more pricey.. I bought both the 10" kitchen and the Nakiri vegetable knife and did not notice the distinction. When they arrived I was surprised at how flimsy they seem.. I have two 8" classic kitchen Wusthofs and got the 10" one to be able to cut all the way through things like melons... but it is not robust enough for that kind of job.. the 8" ones are... I'll keep the knives.... my fault for not looking carefully at the pics (note where the handle meets the blade.. classic has a metal fillet gourmet does not)... but warn other buyers to be careful...

Where has this knife been all my life. Does a fabulous job slicing tomatoes so thin you could almost read thru them. Mincing onions is not a problem. This is my new go to knife. Have used it every day since I received it and it has stayed sharp and continues to do a fabulous job. Love it! I spotted a similar knife on the Martha Stewart show while she was demonstrating cooking and came here to search for one. Best thing I've done ever!!!!

I was surprised by how thin the metal was, though. It's not a very heavy knife at all. It's great for cutting cucumbers and tomatoes but its not really suitable for beets or parsnips. It is extremely sharp, though, and I like using it a lot. It's also put up with some of my mild neglect without staining. A great knife but if you like root vegetables don't try to use it on them!

I am very happy with this knife for the price. It is the lower end Wusthof but it is sharp and very nice for vegetables. The tall blade is not ideal for very hard vegetables because if you push down hard, if the blade does not land perfectly perpendicular, it will slide on the board and can cut you. It works beautifully with softer vegetables than a sweet potato.
