Beautiful piece of work,
This review is from: Wusthof Grand Prix II 3-1/2-Inch Paring Knife (Kitchen)
This knife is solid, sturdy, and very very sharp. It has cut through anything I've tried it on, slicing cleanly through tomato skins, cutting the ends off mushrooms, and mincing garlic and herbs. The handle is easy to grip, and the balance makes the knife easy to use.
This is the best knife in my kitchen, and I look forward to getting a longer blade from the same series.

I've had two of these knives (lost one) and they were the two sharpest knives I've owned, both when I got them and months later. Take care of it, keep it out of the dishwasher, mind your fingers, and never worry about cutting tomatoes again.

You never realize how nice it is to have a quality knife until you own one. Everything about Wusthof knives says quality. It holds a razor sharp edge, fits your hand well and has a feeling of durability, who could ask for more?

This is a great knife. The edge is sharp and hard. The blade works for cutting fruit, vegetables, as well as tourne cuts. I prefer the traditional handle, but decided to try this one. It is quite nice, easy to hold, does not slip in my hand as much as the classic one.

So far I have owned 3 Wusthof paring knives: Wusthof Grand Prix II 3 1/2 inch, Wusthof Gourmet 3 inch, Wusthof Classic 3 1/2 inch. Of the three I would rate the classic as my favorite, followed by the Grand Prix and then the Gourmet is my least favorite because it broke. Both the Grand Prix and Classic and very sharp and slice through a tomato with incredible ease. I have also owned Henkels knives but found the Wusthof brand to be better. The Classic feels the best in my hand, I like the weight of it and it is smooth. I chose the Grand Prix because I thought it would be safer, less likely to slip, and I think that is true. On another note, when the Gourmet broke I sent it to their Returns department and they sent me the Classic for replacement. Their returns staff was helpful, prompt, and well organized. Wusthof makes great knives and I highly recommend either the Grand Prix or Classic paring knives.

I went with the slightly cheaper Grand Prix over the Classic for the paring knife because it's not used as much as a chef's knife, and figured the looks are less important for this piece. I also thought the handle might be grippier so a bit safer, while offering more utility. First thing I noticed is that this knife didn't have quite the heft I was expecting(yes, even out of a paring knife), but the blade is of obvious quality and is sharp. The handle feels a little plasticky, and less grippy or weighted than expected. The blade and bolster are nicely finished. The blade is thick and feels solid with only a slight flex, like it should. It's got an all-around solid feel and impressive edge, but that was expected out of the box for the price. The knife handles well, and I do expect to have it last forever. I still have to admit to making the comparison to a box cutter with that initial feel, though. So far, it's peeled and sliced a hard carrot and celery root with decent precision and ease upon arrival. I'll update on how well it holds an edge over time, which was the big draw to going with the Wusthof stuff in the end. I also picked-up the 8" Classic Cooks knife Wide while I was at it too, and can't wait for it to arrive in the next few days.

This knife is excellent. I replaced an old Chicago Cutlery paring knife with this one, and it has been a pleasure to use. The handle may not be fore some people, but I think the fit is good in my hand. The sharpness is amazing, it peels through anything I throw at it. I'm definitely sold on Wusthof Grand Prix knives.

I am very happy with the quality of this knife. I just started culinary school and this brand was recommended by several of the chefs for those that could afford them. I was already familiar with this brand because I had just returned to the USA after living in Germany for four years. I am glad that I made this investment in a tool that I use daily.
