Just started using this knife. Got it as an x-mas present. Makes cutting up vegetables an absolute joy. Unbelievable how the tools you use can make such a difference in terms of your efficiency in the kitchen. The edge is extremely sharp (be careful) and the handle is very very durable. I especially appreciate the lighter weight of this knife along with its even balancing. After using heavy 8-inch chef knives (Henkels Professional S and Wusthof Gand Prix), this one seems so light on its feet and quick. I highly recommend it for anyone who stir-fries a lot with vegetables. Really the one to get if you are in the market for a Santoku blade. You can check out the other brands, but after a thorough comparison, you'll find this one to be the best in quality and sharpness.

Great santoku knife but buy it for the right reasons,

I bought this knife because I love the authentic Japanese santoku knife that my mother had used for years before she died. I thought I would get another santoku so I wouldn't wear out my mother's, which has an old wooden handle. Plus I saw that Food Network's Rachael Ray used it, and then Sara Moulton started using it too. So I bought it. I'm very happy with it. It's about as sharp as my old santoku knife and my other Wusthof chef's knives. I probably would want to get it professional sharpened a bit more, but it's working fine. Even though it has the scalloped blade, in terms of food sticking on the blade, it's about the same as my old santoku...maybe a little bit better. Don't buy this knife and expect chopped veggies to completely not stick to the blade like magic. You'll be disappointed. It feels better in my hand than my old santoku knife and my other chef's knives, so I'll probably use this knife more than any other. It especially feels good when finely chopping/mincing vegetables around the cutting board using the two hand rocking method. Highly recommended.

Chef who loves knives,

After having done quite a bit of research on high quality German knives, I decided to get the Wusthof Santoku. This knife is very light, and feels great in my hand. I can work quickly and percisely. I only have two gripes with the knife. One, it scratches very easily (I hand wash and am very careful with it at all times), and two, it is a bit small for some tasks. This is my experience. Otherwise, highly recommended for a great general purpose knife. It's great for chopping, much better so than my Henckels Chef knife. A quick word on the Henckels/Wusthof debate. I also have the 4 star Henckels Chef knife. It's pretty good. I enjoy both. Side by side they are of equal quality to my eye. I like the 4 star grip also. With the Wusthof, I'd go with the classic handle if I could go back instead of the Grand prix.Good luck and be safe, respect this tool!

Great Knife! My husband gifted me with it for Christmas. I had been complaining that our knives( which are those eversharp seraded edge ones) always rip up raw meat when I am trying to cut it fine. This knife on the other hand is PERFECT for the job. It is excellent for getting a thin cut on raw meat for stir fry.. or just deboning a chicken. It is a very versitile knife. It is not very heavy though. If you are looking for a knife to cut through chicken bones and such.. use a cleaver. This Is a very very sharp versital tool that is just heavenly to use. It holds an edge very well.

I cooked professionally for over 25 years, and have had experience with many brands, and styles of knives. If I knew back then what I know today, I would say a Santuko, a bread knife, and a paring knife are the only knives needed to last your entire lifetime. (Perhaps a Boning knife if you do a lot of meat prep) This knife does everything a Chef's knife, a Butcher knife, and a Slicer can do. It holds an edge very long, and the handle is comfortable. I have found that Wusthof handles outlast Henkels before cracks develop in the phenolic. The Grand Prix model would be even better for this than the Classic, with it's associated rivets. Slicing thin is easy, the indents in the blade do what they are supposed to do, release food. A Santuko knife should be the FIRST item on anyones list of kitchen essentials. Brand's, of course, are personal preferences, this review is more about the style.

I just received this as a Christmas present and compared it with the Henkel 4-star Santuko that I bought myself. I immediately chopped up some onions and carrots to make soup and test the knives out! The Wusthof does stick less; but I like the heavier weight of the Henkel and the ergo-handle better. I think the heavier Henkel makes a sturdier knive and therefore better control. I may end up keeping the Wusthop for one reason: the handle has almost a quarter-inch more clearance to the cutting surface. If you have bigger hands or knuckles, consider the Wusthof because if you want to use the heel of the knive effectively, you need that clearance; if not, the Henkel is very nice.

A Six-star Knife,

Today I cut up blocks of Parmesan and Pecorins Romano with the knife. The cuts were perfect - no crumbs. It cuts through a bundle of asparagus without using a board. Cut a thick steak into minute steaks or boneless chicken breasts (partially frozen) into thin slices without binding. It is light and sharp and the steel is rigid while thin. Diabetes has attacked my hands so the special grip and light weight work for me. I have a 30 year old Sebatier and Henckles knives but they stay in the block. I still prefer the food processor or chef's knife for chopping. This knife is a true slicer. My knife came with a mini-santuko paring knife with straight line cutting edge, great for slicing mushrooms, lemons etc.

Best knife of its type. The grand prix handle is best and the kullens blade is best. This knife cuts noticably better than the Henkels smooth blade version of this knife.

I've wanted this knife for months. I recently purchased a henckels 4-star block set, which is of course wonderful. But after seeing this Wusthof knife repeatedly used by the chefs on the Food Network, I really wanted to try it. I was delighted to recieve it as a birthday gift and have to say my other Henckels knifes are now collecting dust. I actually look forward to chopping and even find excuses to cut things up. It slices chicken breast into pieces like a dream and works wonders with veggies. I absolutely love this knife, it is the best on the market - buy it...you won't be sorry!

This "all purpose" knife quickly became my favorite. The knife is well balanced and the handle is comfortable in my hand. The hollow edge keeps vegetables from sticking to the knife. I use it for all of my cutting, slicing and chopping. I have a set of very expensive machine made knives that have been sitting idle since the day that this wonderful knife arrived.
