The knife's hollow-edge blade provides a row of oval-shaped grooves along its cutting edge, which increases efficiency, helping to prevent food from sticking. By trapping air during chopping, food is less likely to adhere and more likely to fall to the side. For enhanced convenience, its large blade surface can also be used to scoop and carry minced or cubed ingredients to waiting pans or bowls. Overall, the cook's knife measures approximately 13 by 2 by 1/2 inches.

The latest cutting performance tests carried out by the FGW (Forschungsgemeinschaft Werkzeuge und Werkstoffe e.V., a German research association for tools and materials based in Remscheid) confirm that Wusthof forged knives offer the best quality when compared to other well-known, single-layer brands.

PEtec

The extensive tests were carried out in accordance with DIN EN ISO 8442-5. Wusthof knives have a considerably higher ICP (Initial Cutting Performance) and maintain this performance for an extremely long time (TCC = Total Card Cut).

When compared with the winners in the "cook's knife" category awarded by German consumer organization "Stiftung Warentest" in its 1st edition of 2008, forged Wusthof knives featuring the new PEtec technology produce a result which is about 20% higher.

Types of Blades

The Right Blade for Every Purpose

The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended.

The Differences:

Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit.

Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread.

Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices.

Cleaning & Storage

Proper care for long-lasting cooking enjoyment

If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel.

Wash

For proper storage we recommend the following options:

If it wasn't for my sister then I'd never know about these knives. Bought it for her as a present because she wanted a quality knife. I only used it once & I don't want to use anything else now. For those who love to cook & seek a well made knife then look no further. The balance from handle to tip is excellent, handle is solid & ergonomic, & the blade zips through about anything. Aside from being a great tool in the kitchen, it looks intimidating like something Special Forces could use. Don't let the lack of reviews fool you because I'd buy another one of these without hesitating.

Another quality German made product.

This was my second Wusthoff knife. I love it as much or more than my santuko. I now have trouble deciding which to use. I have thown out all the rest of the knives in my drawers. Only Wusthof for me from now on.

I've had this knife for a few days now. Truthfully, I would give it a rating of 4.5 stars. The tempered stainless steel is clearly of high quality. The finish is the right finish for a chef's knife. It cuts like a dream, and it's big enough for my hands. Also, the santoku-style cutaways certainly allow the knife to slide through solid foods easily. The blade is relatively thin, which requires this knife to be babied, as most fine knives should anyway.

The only drawback I would mention is its balance. When holding it just behind the bolster, it tips forward (the blade tends to fall down). For me, this translates into slightly reduced feeling of control. I've used some very expensive chef's knives before and they tend to achieve balance when teetered behind the bolster.

The handle feels great and it's some sort of hard rubber polymer. It has good grip when wet. However, it doesn't look as good as the harder handles; it looks cheap.
