I was a little leary about spending $60 for a single knife, however I have become quite a chef at home and the knives I purchased for under $20 always became dull after just a few uses. I use this knife for everything, from chopping vegetables to slicing meat, its an awesome knife and perfect size.

I bought this knife a couple of months ago (although not from Amazon) and was impressed. It is short and light and is best suited for chopping, but can also slice and dice fruits, smaller vegetables and herbs. Like all Santoku knives I find that it's really not good at mincing because it lacks the easy rocking motion of knives with bellies (the curved blade on traditional German style chef knives). I also found it difficult to work with on sweet potatoes and other larger vegetables because it is so light and small. I have tried it on meat and it did the job of slicing alright, but I prefer something bigger and sturdier when working with a piece of meat.

This is a home cook knife, suitable for certain tasks. It feels like a razor in your hands and the handle is light and small. It would be ideal for someone who has small hands, works mostly with vegetarian dishes, and small portions.

That being said, it is surprisingly sturdy. I have used a no name honing steel on it and that seems to do the job of realigning the blade all right. It has remained sharp, and not needed stoning, although I've used it almost daily for about four months. I do a lot of cooking with my relatives and this is the knife they all reach for when we cook together.

It is a German knife with a soft steel, compared to most Japanese knives, but in my experience has great edge retention....so far.

I bought the 7 inch version of this knife a few years ago and loved it. But I did not take care to sharpen it and it became dull. I bought this as a replacement, and also because I prefer a smaller blade. I LOVE this knife. It is sharp, light on the grip, and very easy to use on meat, vegetables, fruits and anything you can think of. I use it everyday and it is my go-to knife. Wusthof makes great quality knives and the price on Amazon is very reasonable.

It's a quality knife and nice and sharp. The 5 inch blade is a bit shorter than what I am used to, but wanted to try something different. Also, this knife is flat across the bottom of the blade (the sharp edge) and not use to that, so you don't really get a rocking motion when you're chopping vegetables, etc. I also found that the "dimples" along the edge that are supposed to reduce things from sticking to the blade as you slice doesn't really help.

Wusthof came highly recommended to me, and I can see why. Their products are amazingly high-quality, durable, and worth the investment.

My husband and I use this Santoku knife more than any other because it's a manageable size (comfortable to use and easy to clean) and stays sharp. The ridges on the side of the blade prevent food from sticking, so you can slice and chop more quickly.
