Book Description

July 22, 2010 ...Bible (Robert Rose)

Easy-to-make recipes for great homemade yogurt that is healthy and delicious.

Making yogurt at home is surprisingly easy, and these homemade versions taste so much better than any brand available from a store. Perhaps most importantly, the home cook can control all of the ingredients, from organic cow's milk and soy milk from a farmer's market to ingredients found at a health food store or local grocer. Pat Crocker's recipes cover every taste and variation, from the sweetness to the thickness.

The home cook needs just three key elements to get started: fresh milk (or other liquid), live bacterial culture and temperature control. The only equipment needed are a stainless steel saucepan, a thermometer and a constant heat source or an electric yogurt maker.

The Yogurt Bible features 175 recipes: 35 stand-alone yogurt recipes followed by recipes that feature yogurt as a main ingredient or topping. These recipes provide endless ways to incorporate delicious yogurt into a diet or family regimen. The book features the basic method for lower-fat milk, soy milk, cultured rice milk, nut milk, fruit milk and coconut milk yogurts along with recipes for:

  • French vanilla yogurt
  • Strawberry yogurt
  • Chocolate yogurt
  • Caramelized pear and onion flatbread
  • Tunisian carrot feta salad
  • Mushroom and artichoke risone
  • Zucchini and leek gratin
  • Whitefish and vegetables with curry sauce in parchment
  • Shrimp Creole
  • Seared scallops in mushroom yogurt sauce
  • Fettuccine with crab and shrimp sauce

The Yogurt Bible proves that making yogurt at home is easy, fun and satisfying, and the results are very healthy -- easily replacing commercial, higher-fat items such as sour cream, mayonnaise and cream cheese.

Editorial Reviews

Review

Pat Crocker's The Yogurt Bible as a must have healthy cookbook. If you know someone who wants to eat more healthfully, make their own yogurt or would like to use more yogurt in their cooking, The Yogurt Bible would make a wonderful holiday gift. (Anne-Marie Nichols This Mama Cooks! 2010)

Here was the book with the kind of detail that could have saved me a week's worth of culinary aggravation. And if you are really interested in learning how to make yogurt properly, this is the manual you need. (Wendy Burke Winnipeg Free Press 2011)

One of the most concise and useful bibles I've read. (Julian Armstrong Montreal Gazette 2010)

The Yogurt Bible will show you step by step how to make your own yogurt from scratch using a variety of methods including a heating pad, crock pot, yogurt maker and your low temperature oven. It also includes directions for using several different types of milk besides traditional cow milk. You will also find recipes for syrups and toppings for yogurts as well as different flavors of yogurts.

The Yogurt Bible includes a section on healthy body systems that breaks down what each body system does (cardiovascular, digestive, endocrine, immune, musculoskeletal, nervous and respiratory). It tells you what you what disorders affect each system and what the best and worst foods are for each system. This chapter even explains what stress management techniques work best and what exercises you should focus on. There is a chart in each section that tells you the top 10 best bets for each and what foods protect each system and why. I love this section. I have it bookmarked for frequent reference.

Equally fantastic is the chapter on whole foods that explains why whole foods are necessary for good health and then details a huge list of whole foods, what they help with, how they work to provide good health, how you can buy and store them and their culinary uses. It includes a variety of fruits, vegetables, legumes, whole and ancient grains, nuts and seeds, sea vegetables and even herbs!

The final section of the book includes recipes you can make using yogurt. You'll be amazed at the selection which includes Dips, Spreads, Snacks and Starters; Soups; Salads and Dressings; Mains; Sauces; Desserts and Frozen Yogurts; and Beverages. I love the recipe selection!

I made Strawberry Yogurt from some of our homemade strawberry jam and it was amazing!

5.0 out of 5 stars yogurt bible and everything else December 23, 2011

This book has everything you need to know about making yogurt and great tips added too. The extra sections related to body systems and whole foods have so much information. Originally I took this book out of the library but knew I had to have my own copy. If you like yogurt and if you want to eat healthy this is the book for you.

4.0 out of 5 stars A good book, overambitious title, 100 completely extraneous pages.
Most buyers will find this a good and useful book, but prospective purchasers should understand a few things. It has a 100 page section -- a third of the book! Read more

3.0 out of 5 stars Not quite what the title suggests
This is a good book, don't get me wrong, but I was looking for a book on making yogurt, not recipes for using yogurt. Read more

5.0 out of 5 stars great
Full of great information for the beginning yogurt maker and wonderful recipes for experienced makers. From starters to finishers all the way through it's even a good read.

3.0 out of 5 stars Very few recipes
I was looking for recipes to make yogurt not a "healthy living guide" which is what 3/4 of the book is about. The title is very misleading.
