This handbook presents Persian cooking that has been adjusted for special needs. It will be particularly helpful for diabetics, people with heart disease, or anyone with the desire to lose weight in a healthy way. Sajedi, a registered dietitian, includes a good deal of dietary information and offers a method of pan broiling to replace the heavily fried foods of many Persian dishes. Each recipe contains nutrition information and a diabetic exchange table. Soups, appetizers, salads, vegetable and egg dishes, rice dishes, and stews are presented, along with recipes for meat, poultry, and fish. One appendix charts the calories, fat grams, etc., found in fast foods; another details suggested weights for men and women, calories spent in different activities, and a conversion table.
