Whether for weight loss or for counteracting diabetes, many have found a happy solution to health issues by following a high-protein, low-carbohydrate diet. But temptations to break that regimen abound, and people hunger after starchy, sugary comfort foods. Jackie Hanna comes to the rescue with
Not Your Momma's Cookbook. Hanna creates low-carbohydrate versions of southern-style home cooking. Some of Hanna's solutions are simple: eliminate carbohydrates from Eggs Benedict by removing the English muffin. Others are less obvious: substitute turnips for potatoes in potato salad and in potato soup. Soy flour replaces wheat flour as thickener, and sugar alternatives abound. Recipes are generally simple and homey, but some require hard-to-find prepackaged flour substitutes. Nutritional analyses in the recipes limit themselves only to carbohydrate grams.
