This is a beautiful, very well made chef knife. With the price you paid for, I will say it's super great value on your hand. You may usually need to spend at least $ 200~250 to get a good quality Japanese steel chef knife like this. The Packwood handle looks nice and very comfortable to hold, well balanced. With this length, 10.5", you could produce more vegetable at the same time or cut a large piece of beef or pork easier. The blade is sharp out from the box. I did do some research on the Japanese blade, VG-10 Damascus steel, it should be the same material that SHUN uses to make their knives. This kind of steel, you could stay sharp for longer time compare to German steel. You don't need to re-sharpen that often. I would recommend this knife and you may find some professional chef review on youtube.

I have several ZHEN, they are super sharp great knives, I have sharpened them with the Spiderco Tri angle sharpener at 16 degrees. They maintain a sharp edge for a months. A butchers steel with a few strokes keep them sharp. VG 10 steel its very good steel. They are also beautiful knives. They are less than half the price of a better known similar Japanese product of the same quality

It is sharp and looks good right out of the box. My wife and I used it to Prep Christmas dinner and to carve the Christmas turkey. It is to early to tell how well it holds up overtime at this point but it feels and looks well made. I'm probably going to buy some other knives from this manufacturer. I can't comment on how they compare to the Shun Knives but compared to the off the shelf set of Henckels I got a few years back this is a Major improvement. I cut the Turkey pretty easily and cubed the potatoes for the mashed potatoes with ease and thinly sliced the apples for the apple pie. The big apples I used had a pretty tough skin but once the blade got some traction cutting was no problem.

I bought this knife for one of my family member who is attending culinary school. So the feed back is from her. The knife is only moderately sharp, not hair shaving sharp. The worst aspect of the knife is that the grind is uneven on two sides. The sharpness of the knife can be forgiven since it is fixable. However, with uneven grind, it is difficult to sharp the knife.
