The balance on this knife is great. I use it for nearly every job. I had a cuisenart food processor and gave it away. I found I was faster with this knife, and there was less cleanup.

Previously I had a 10" chef's knife and its too long, the motion of picking up the heel of the blade meant I had to lift my arm too high. It just wasn't comfortable. The 6"...

I bought two of these knives (one after the other) because I loved the first so much. I'm a fanatic about caring for my knives, and even hubby knows to grab any knife BUT my Henckels. They've never been placed in a drawer or dishwasher, they are hand washed, and they get steeled regularly.

Imagine my dismay at knife number one going totally dull after six...

The balance on this knife is great. I use it for nearly every job. I had a cuisenart food processor and gave it away. I found I was faster with this knife, and there was less cleanup.

Previously I had a 10" chef's knife and its too long, the motion of picking up the heel of the blade meant I had to lift my arm too high. It just wasn't comfortable. The 6" seems too short, the 8" is just right.

You really only need about 3 knife styles, and this is one of them. (Bread knife, and paring knife are the other two.)

I gotta tell ya...this has been the best "out of the box" knife that I have used in a long time and I have purchased and used every FORGED 8 inch chef's knife from every line of every manufacturer listed here on Amazon. The factory edge was perfectly honed and sharp as a razor right from the get go. Usually I have to use a sharpening steel for a few strokes to reclaim the edge but not this one. Maybe I got lucky but I do love it dearly.
The 4 Star line has been around since 1976 and Henckels knows that we "Pros" love it for it's low maintenance, ease in sharpening, comfortable grip, sanitary design AND price. The blade is classic German in shape, a long, round curve for perfect rockin' and a good weight for heavier work (although in the mid to late '90s they went to a French shape and weight for some reason). This 4 Star can't be beat for dollar value.
This is my 5th one purchased in the last 23 years...the previous ones were all "stolen" by line cooks on the job...'nuf said.

I love to cook, and I've spent a lot of money on cookware. For some reason, however, I continued to buy cheap knives. I guess I always felt that the actualy cookware I was using was so important, that I didn't really understand how having such a good knife would improve things.

Then I got this knife as a gift from a friend who comes over for my cooking a lot. I couldn't believe what I'd been missing! The weight of the knife, combined with such an incredible blade makes 'slicing and dicing' one of the best parts of cooking! This blade has taken everything I've thrown at it effortlessy. I bought a Henkle sharpener to go with it, but it holds its edge so well I don't sharpen it too often.

This kinfe also looks great. Plus, with Henckel quality, you know this will last almost forever.

Pros:
-Holds an edge very, very well
-Solid and heavy - makes chopping so easy
-Well balanced - feels great in your had
-Henkel quality

Cons:
-I only have one! (seriously, I don't have a real con).

This knife is made of lots of good, hard steel. I've had one for the last -- let's see, how long...? 10 years. And I could easily have it for another fifty; unless you're a professional chef, you're unlikely to use up the blade in a lifetime of sharpening.

Ultimately, when you choose a Henckels knife, you need to hold them, because they make three handle styles, all of which are combined with those terrific blades. They are stainless, so they don't hold an edge as well as the old-school carbon steel, but they also avoid rust that way.

You can't go wrong with this knife.

This knife will replace half the gadgets and appliances in your kitchen if you learn how to use it properly...It will also last a lifetime. The balance is excellent and these molded handles are much more comfortable than the old riveted ones.

I've been using my Henckel's chef's knife for many years now, and I continue to be impressed with it at every use. The size, weight and balance make it comfortable to use, even for larger "projects" that might cause your hand or arm to get tired with a lesser product. Even after countless uses, the edge remains super sharp, requiring only rare application of the sharpening steel. I found this out the hard way a few days ago with a careless slip of the hand... The heavy duty stainless steel has stood up perfectly to umpteen-bazillion trips through the dishwasher, without the tiniest hint of rust or discoloration.

In short, this is truly a professional quality knife, as is every item in the Four Star, Five Star and Pro-S lines. Yeah, this puppy costs $80 or more, but it's definitely a worthy investment. You really do get what you pay for! Just a word of caution -- stay away from the lower-end Henckel's International line, which is much cheaper but not of comparable quality.

I love this knife! It makes me look forward to cooking every day. I thought we had some pretty good knives (we got a set of Henckels International for our wedding years ago), but man was I wrong! I found out that a knife makes a major difference in prep time and ease of preparing. I think I love the balance most of all. I like the grip and the design, which keeps my fingers from hitting the board. That was a key for me because I have big hands and all of our other knives cause my knuckles to hit the cutting board and also prevents the knife from making a complete cut. It also seems to be the perfect weight for me. My wife thinks it's too big for her, so I ordered her the 5" Santoku and the 6" Chef.

I would highly recommend this knife.

My trusty 8" Henckels chef has been my favorite knife for more than 25 years. It did 5 years of double shifts in a commercial kitchen years ago and still functions as new,with a few cosmetic badges of honor. It gets daily use and holds a great edge; a real jack of all trades, it can slice a ripe tomato or cut through a chicken breastbone. A professional sharpening every 3 or 4 years seems to be sufficient, though I touch it up with a fine diamond sharpener every few months. If I could have but one knife, this would be it.

I just bought this for my wife. I had looked at Al Mar kitchen knives (Gerber, a fine knife maker doesn't make any that I could find) but I bought this Henckel because of the fine reviews chefs had given it. It arrived the other day and my wife has had the opportunity to try it out in the kitchen in the preparation of two dinners. She was stunned by the difference over her old, cheap knife. This German-manufactured knife is extremely well-made, perfectly balanced, and razor sharp. And I can count on this carbon stainless to deliver up a very nice edge when it comes time to sharpen it.

I used it myself to test it out and I've got to say Henckel really pulled out all the stops on this knife. It'll handle anything you need a knife for in the kitchen...in spades. For my money this is most definitely a five-star product and I'll probably buy another one for a gift as it is truly a fine and expensive looking knife.

This product
