From the Manufacturer
| First introduced in 1976, the Four Star® Series is one of the world's most popular knife lines. Four Star® knives were designed and developed in close cooperation with renowned professional chefs. The result was a fully forged knife with a unique molded handle. The Four Star® line contains knives for all tasks, and includes the following open stock knife types: parer, bread, peeling, sandwich, utility, carving, chefs, granton edge slicer, santoku, and others. Four Star® knives are also available in a range of block sets and gift sets. |
A Higher Standard in Knife Construction
Four Star® knives are precision forged from a single piece of exclusive-formula, high-carbon, no-stain steel under the all-new Sigmaforge standard. As a result, Four Star® knives have improved quality consistency, lasting sharpness, and perfect geometry. Sigmaforge one-piece construction also provides high precision and improved stability of the blade and steel structure, thus improving cutting-edge retention for lasting sharpness. In addition, Four Star® knives use J.A. Henckels Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention.

It's All in The Grip:
| The Four Star® series features high impact polypropylene handles that are permanently bonded to the knife blades without any gaps. These comfortable handles are break-proof, sanitary, and colorfast. In addition, the super bolster provides weight, insures safety, and adds balance. |

Henkels Boning Knife,
By A Customer
This review is from: Zwilling J.A. Henckels Four Star 5-1/2-Inch High Carbon Stainless Steel Boning Knife (Kitchen)
This knife is an excellently balanced knife capable of taking and holding a sharp edge. (A steel for truing the blade is necessary.) The blade is flexible which allows the user to easily follow the bones and remove the meat. I bone all of my chicken breasts and thighs with this knife and am able to debone a dozen breasts in a short time. The knife's balance makes it tireless to work with while providing enough heft to do the job.

Henkel 4-Star Deboning Knife,

Amazon Verified Purchase(What's this?)
This review is from: Zwilling J.A. Henckels Four Star 5-1/2-Inch High Carbon Stainless Steel Boning Knife (Kitchen)
The Henkle 4-Star boning knife is an excellent and well balanced knife. It has a flexible blade and an extremely agressive, sharp edge. Maintaining its sharpness with a steel is easy.I have de-boned lamb legs, lamb shoulders, many chickens and prepared spare ribs for smoking with this knife. It has done the job very well and I earnestly recommend it.

Perfection,
This review is from: Zwilling J.A. Henckels Four Star 5-1/2-Inch High Carbon Stainless Steel Boning Knife (Kitchen)
I've used this exquisite boning knife for many years, and used it heavily- cutting apart and boning out very many goat carcasses, chickens, cutting up pieces of meat, etc. etc. Since I use it to cut apart large joints I am often pushing it against the bone but in spite of the abuse it keeps its edge like nothing else. I've not had any knife that comes close to this one in performance for these jobs.It IS rugged. Sharp. The point is enough to poke through membranes. The curve near the tip ideal for boning. The concave curve near the base of the blade helpful when I want extra leverage in getting through a joint, etc. The balance and shape of the handle unbelievably suberb. If I sound passionate about this knife, I am! A great knife is a lovely thing to someone who uses it regularly and values an excellent tool. All you need to do is pick up one of these Four Star pieces (their 10" chef knife is my other favorite) and you'll know what I mean. It fits in your hand as if it had been molded there. And it still feels that good after an hour of pretty steady use. On my big boning jobs I use a lot of pressure in a variety of positions and tend to work fast and hard but this knife goes a long way toward making it easy. It feels like part of my hand and even when my grip gets tired and greasy I am secure in the excellent design and never slip. The handle curves are deep and comfortable at either end. The blade itself is, of course, perfection. Very strong and durable with an ideal balance between flexibility and rigidity. It bends when needed but has plenty of backbone too- something I find very important as it provides great control and ease of use. Highly recommended without reservation!
