I admit it freely -- I'm a knife snob.Before I buy a knife, I have to hold it and fiddle with it to make sure it's properly balanced. I have to see that the bolster (the flared bit between the blade and the handle) is big enough to act as a brake, but not so large as to be a nuisance. I have to check the pamphlet to see that it's made from a good quality stainless steel. This Henckles Pro-S Steak Knife passes all those tests, plus two others you can only check over time: Does the handle stand up to repeated use, and does the blade really hold it's edge? Score up two more yes votes. These knives last and last, and slice and slice -- and are a pure pleasure to use. And they look great on your table, too. Relaxed enough that they don't make your everyday china look cheap, but well-made enough to look good next to your wedding china. Buy these knives.

Knife Broke,

After owning this for 18 months, this knife broke in two pieces about one inch past the handle. It was the blade that actually broke. What a shock when all I was doing was separating a preseparted cheesecake that was frozen and had paper between the pieces. Scary and True...
