I work in a sushi restaurant but not at the sushi bar so I don't go through that much fish. As a beginner, using a slicer, I find that this one is very easy to use. It's long and it stays sharp for moderate usage. I fabricate 20 sea/black bass, and 1 King/Atlantic salmon each week. And it looks pretty nice too.
