Classical styling and state-of-the-art technology in blade manufacturing combine to create the Twin Pro S series. Each blade uses the precision SIGMAFORGE construction and is made from the J.A. Henckels exclusive formula high carbon, no-stain steel that is precision-hand honed to stay sharper for longer, and have a more consistent blade angle. The steel is hardened using the patented Friodur ice hardening system for maximum no-stain properties and excellent blade strength because of the improved resistance to corrosion and pitting. The triple riveted Novodur handles lay on the fully visible tang, giving the knife proper balance and greater strength. Like a carving knife, slicing knives are made to cut through cooked meats of any kind, including roasts and poultry, but have a thinner blade for extra thin slicing. It's the perfect knife for slicing meat at your next holiday dinner and with it's hollow edge, will allow for even thinner slices for sandwiches.

This knife's thin, 10-inch blade makes any fine-slicing job a breeze and handles all big carving jobs easily. Classic three-rivet handles distinguish Pro S from Henckels's other quality lines, TwinStar, Five Star, and Four Star. Pro S handles are heavier and its knives less weight-forward. Handles are also smaller, a feature those with small hands may appreciate. The steel used in the Pro S line is identical to that of the Five and Four Star lines. High-tech welding of knives this size and larger combines three steel types into what appears to be a single piece, so a knife's parts have distinct characteristics: a hard edge; a strong, stain-resistant bolster; and a stain- and corrosion-resistant tang. Traditionalists insist on single-piece forging for strength, but Henckels says the invisible welds are actually stronger than the steel. This knife as received was sharp as a razor. It is nicely balanced and quite flexible for cutting roasts, steaks, etc. Finish was perfect as to be expected and should provide years of excellent service. Product arrived on time and in excellent condition with packaging inside and out of the highest quality.

I added this knife to a block set and in retrospect I probably could have gone with the eight inch. It is a great knife, however, and makes carving a dream. I've had many electric carving knives over the years but never experienced such carving ease as with this knife. The whole Zwilling set has been a wonderful investment.

We purchased this knife as a present for my father, who has used his existing carving knife for about 50 years. While his old knife still works, it's actually somewhat humorous to see just how worn away the blade of the knife has become after all these years.

The new Henckels blade is beautiful -- described by my dad as "scarily sharp" when first used. :) It has the very solid and bonded feel of other knives that I've enjoyed. While we've only had it for a few months, and so can't give a long-term review, it has behaved excellently so far, and we expect to get the next 50 years of use out of it. :)
