J A Henckels 8" Bread Knife Four Star Series 31076 203 - The Henckels Four Star line is made in Solingen, Germany, and are forged, not stamped. Blade density is improved using the FRIODUR ice-hardening process, which provides a sharper initial edge for easier maintenance over time. Larger knives are crafted using Henckels' exclusive Sinternal Component Technology, which fuses blade, bolster and tang into a single, seamless piece for precision, easy handling, and balance. Part of the Four Star series, this knife is made of high-carbon stainless steel and precision-honed, with a laser-controlled edge, a balanced super-bolster, and a tang that extends to the back of the polypropylene handle, which is permanently bonded for seamless accuracy. The 8-inch blade on this knife features a curved back and a straight, scalloped edge. The serrated edge penetrates resistant crusts, slicing evenly through even hard loaves of bread without crushing the delicate interior. The knife is also well suited for slicing tough, fibrous fruits, such as pineapples. Serrated-edge blades cannot easily be resharpened, but because the primary cutting surfaces are in the curved part of the scalloped edges, they tend to hold their cutting abilities quite well. Most of the Henckels lines--including the popular Four Star series--feature blades made of Friodur, a special, ice-hardened, no-stain steel created and patented by the company in 1939. This special formula was designed for exceptional hardness and high resistance to corrosion.

After buying a bread machine, we now no longer buy our bread. Everyone (children and adults) cuts their own bread, at the table, to the slice thickness they prefer. With my old bread knives, the slices quite often came out looking like an ocean surface (waves and all). After upgrading to this Henckel (to match my other Henckel knives), we can now all cut straight slices. It doesn't matter if the bread just came out of the bread machine (yum) or if the bread was baked yesterday. No longer is the French bread (hard crusts) squashed while we try to slice it. This is definitely the "best thing since sliced bread"!

This knife's best at slicing tomatoes and other veggies. It's a bit short for cutting big peasant loaves, and the straight blade makes it harder to cut at an angle down through the bread, since the sharp point, while great for starting a cut through an obstinate veggie skin, can get stuck in your cutting board. The serrations work great, however, slicing through both crust and soft inner breadness.

I've had this knife for over ten years and have never had it sharpened. It still works great. I chose the bread knife over the smaller serrated utility knife and use it not only for bread, but also for tomatoes and other delicate things that need slicing.

Hubs thought I was crazy for buying an $80 knife, but I seriously don't care. I've always struggled with larger handled knives since my hands are so small, and I'm an avid bread baker so am always cutting bread. I use an electric knife when cutting even slices of loaves, but I wanted a bread knife for those two or three slices . . .this thing is awesome. Sharp, nice handle that my hands can easily grip, and it's beautiful. Perfect!

I have personally used this series of Henckels knives for almost 20 years and they are as perfect today as the day I bought them. I now am purchasing them for my children. I would also recommend the Spiderco Tri-Angle stone sharpening system (available on Amazon model 204MF) as it keeps them as sharp as they were when new and as with any good knife, that's very important.

Purchased to add to four star 3pcs set. Cuts very well, two criticisms. The pointed tip should be rounded to prevent sticking into cutting board when cutting at an angle. The blade would be better if dropped down from the handle(similar to the chefs knife), allowing you to cut through without your hand getting in the way.

Can't beat this knife for quality. Like all the Henckle Four Star knives I have, this one is sharp, solid, and comfortable to use. More importantly, it cuts thru touch, whole grain bread like it was butter - unlike other bread knives we've had. Go for it, and while you're about it, buy an entire set of Four Stars.
