The 8-inch blade on this knife features a curved back and a straight, scalloped edge. The serrated edge penetrates resistant crusts, slicing evenly through even hard loaves of bread without crushing the delicate interior. The knife is also well suited for slicing tough, fibrous fruits, such as pineapples. Serrated-edge blades cannot easily be resharpened, but because the primary cutting surfaces are in the curved part of the scalloped edges, they tend to hold their cutting abilities quite well. Most of the Henckels lines--including the popular Four Star series--feature blades made of Friodur, a special, ice-hardened, no-stain steel created and patented by the company in 1939. This special formula was designed for exceptional hardness and high resistance to corrosion.

After buying a bread machine, we now no longer buy our bread. Everyone (children and adults) cuts their own bread, at the table, to the slice thickness they prefer. With my old bread knives, the slices quite often came out looking like an ocean surface (waves and all). After upgrading to this Henckel (to match my other Henckel knives), we can now all cut straight slices. It doesn't matter if the bread just came out of the bread machine (yum) or if the bread was baked yesterday. No longer is the French bread (hard crusts) squashed while we try to slice it. This is definitely the "best thing since sliced bread"!

This knife's best at slicing tomatoes and other veggies. It's a bit short for cutting big peasant loaves, and the straight blade makes it harder to cut at an angle down through the bread, since the sharp point, while great for starting a cut through an obstinate veggie skin, can get stuck in your cutting board. The serrations work great, however, slicing through both crust and soft inner breadness.

I've had this knife for over ten years and have never had it sharpened. It still works great. I chose the bread knife over the smaller serrated utility knife and use it not only for bread, but also for tomatoes and other delicate things that need slicing.

This is the perfect bread knife - so sharp that it cuts through most breads without any tearing or ripping. It is a little thick, so very tender breads may do less well with it. Just be sure to let the knife do the work and don't press down on it. If I find one fault with it, it is only because I bought the Chef's Knife at the same time and the bread knife is just not quite as balanced. Maybe that's on purpose and allows it to work better but the feel is just very different.

I have personally used this series of Henckels knives for almost 20 years and they are as perfect today as the day I bought them. I now am purchasing them for my children. I would also recommend the Spiderco Tri-Angle stone sharpening system (available on Amazon model 204MF) as it keeps them as sharp as they were when new and as with any good knife, that's very important.

There are number of rust spots on one side, dirty spots on the other side, the red and silver J. A. Henckles label on the handle which indicates as a new J. A. Henckles knife is missing - left a mark shows it was there. Clearly it has been used at some point, After contact, was told examed it before mailed out and missing label was not the part of knife.

Purchased to add to four star 3pcs set. Cuts very well, two criticisms. The pointed tip should be rounded to prevent sticking into cutting board when cutting at an angle. The blade would be better if dropped down from the handle(similar to the chefs knife), allowing you to cut through without your hand getting in the way.
