Product Description

Product Description

J.A. Henckels Four Star 5" Hollow Edge Santoku is the perfect size asian style knife. The hollow edge allows for paper-thin slices and keeps food from sticking to the blade.

Amazon.com

The Four Star santoku pairs a sharp, Friodur ice-hardened blade with a seamless, ergonomic black polypropylene handle. Scallops along the edge of the high-carbon, no-stain steel blade reduce friction during slicing by creating air pockets and thus result in paper-thin slices. The blade maintains a sharp edge for ages and sharpens with ease. While the blades of Four Star knives are the same as those of the Five Star series, the former feature a straighter handle with a distinct heel.

Nicely balanced and relatively lightweight, this particular five-inch santoku from upmarket Zwilling J.A. Henckels makes a superb gift for any home chef who enjoys Asian cooking. Made in Germany, the knife, though dishwasher-safe, is best washed by hand and is covered by Henckels' lifetime warranty. --Ann Bieri

From the Manufacturer

First introduced in 1976, the Four Star® Series is one of the world's most popular knife lines. Four Star® knives were designed and developed in close cooperation with renowned professional chefs. The result was a fully forged knife with a unique molded handle. The Four Star® line contains knives for all tasks, and includes the following open stock knife types: parer, bread, peeling, sandwich, utility, carving, chef’s, granton edge slicer, santoku, and others. Four Star® knives are also available in a range of block sets and gift sets.

A Higher Standard in Knife Construction

Four Star® knives are precision forged from a single piece of exclusive-formula, high-carbon, no-stain steel under the all-new Sigmaforge standard. As a result, Four Star® knives have improved quality consistency, lasting sharpness, and perfect geometry. Sigmaforge one-piece construction also provides high precision and improved stability of the blade and steel structure, thus improving cutting-edge retention for lasting sharpness. In addition, Four Star® knives use J.A. Henckels’ Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention.

It's All in The Grip:

The Four Star® series features high impact polypropylene handles that are permanently bonded to the knife blades without any gaps. These comfortable handles are break-proof, sanitary, and colorfast. In addition, the super bolster provides weight, insures safety, and adds balance.

Features:

  • SIGMAFORGE 1-piece, precision forged construction: Provides perfect geometry, high precision, and improved stability of the blade and steel structure, thus improving cutting edge retention for lasting sharpness.
  • Laser controlled edge: Is sharper and stays sharper longer. Has a more consistent blade angle.
  • Friodur ice hardening: Maximum no-stain properties and more blade strength. Improved resistance to corrosion and pitting.
  • Super bolster: Provides weight, insures safety, and adds balance.
  • Full rat-tail tang: Provides a proper balance and greater strength.
  • High-carbon no-stain steel, an exclusive J.A. Henckels formula: Non-staining, non-rusting.
  • Hand, precision honed blade: Is sharper and stays sharper longer.
  • Bonded polypropylene handles: Comfortable molded handles and food safe
  • Dishwasher safe: Easy care (Although hand-washing is recommended by J.A. Henckels).
  • Full warranty: J.A. Henckels stands behind all its knives.

I have a set of Henckels chef's knives that I just adore. I recently added this 5-inch hollow edge santoku to my set. It has everything I have come to expect from Henckels: world-class quality, balance, comfort and control.

I am an advocate of EXCELLENT kitchen knives because they are so much more safe to use than crappy knives. When you use one of these, you are in control, even when cutting something hard and round like a winter squash or a huge, firm onion.

After Hurricane Katrina, when my stuff was in storage on the other side of the country, I went out and bought some inexpensive (OK, CHEAP) kitchen tools to get me by until I could get my things out of storage. I had TWO different knives break apart in my hands while I was using them! You know the kind: cheap plastic handle, poorly joined to the blade, not terribly sharp. Yikes.

What a relief it is to have a good knife in my hand again. I can focus on cooking, rather than on avoiding maiming myself with a cheap blade.

Every household needs at least three good kitchen knives--a paring knife (for trimming mushrooms and slicing small veggies, like carrots), a smaller chef's knife (for chopping onions and small cabbages) and a large chef's knife (for slicing bigger, harder things like watermelons and butternut squash.)

This 5" santoku nicely bridges the gap between the small and large chef's knives--perfect for people on a more limited budget. I used mine tonight to thinly slice a large onion. It slid through the onion like a warm knife through soft butter and the slices fell away from the knife cleanly as advertised. Using a good tool made well is one of life's enduring little pleasures.

This is a awsome knife. Super sharp. Great weight and easy to use on Veggis, Seafood, Sushi, Beef etc. Cut Salami or Carrots paper thin. The slices will fall right of the side, no more sticking to the blade! Great for chopping as well. I have almost all the 4 Star Henckels and I love them all and this one stands out. I can highly recommend this great tool. The same Santoku knife also comes in 7 inch lenght (for only ten dollars more) in case you are interested.

This is an outstanding knife. It has replaced my Henckels 6" chef knife as my go to knife for smaller jobs. I thought my knives were sharp, but this knife is so much sharper that I'm now sending my other knives out to be professionally sharpened. I highly recommend this knife and at the sale price, it's a real bargain.

This is my favorite kitchen knife. I have a complete set of Henckels, but this is my "go to." We bought a set of knives for my daughter and this was one of the knives in the set. As soon as we arrived home, we ordered one for us. A must have for anyone who cooks.

This knife helps to round out my collection of Twin Four Star knives. This model is a little less cumbersome than the 7" version but I wouldn't trade either of them for anything!

Still looking for the perfect prep knife. This is one step closer, but a little more rocker to the blade, and a little more chef's knife point to the tip would be nice. My only real complaint is the bolster - the transition from blade to handle feels a little clumsy underhand when pinch-gripping it. I like the Four Star thicker handle because I have large hands, and at 61, they get a little stiff, making thin hard handles on most other knives uncomfortable. All-in-all, an excellent piece, and like all Henckels knives, sharp and well balanced.

It is sharp. But the edge of the blade that is the closest to the handle is not protected by any thickening of the blade..
I caught myself many times bad. It took a while to figure out how to be careful around it and still use it. It seems that the bigger santoku I have did not have that problem at all, but I think it was not twin four star.
I would not buy it again.
