Product Description

Zwilling J.A. Henckels Twin Select Mincing Knife

Amazon.com

Using its two half-moon-shaped blades and a little human power, this knife rocks back and forth to mince foods such as garlic, herbs, or nuts on a cutting board. Crafted from 18/10 stainless steel, this mincing knife has a curved ergonomic handle for comfort while cutting and a sleek, modern-looking design. As with all Twin Select knives, the stainless-steel blades go through a Friodur ice-hardening process, which strengthens the blades and protects them from discoloration. This knife is dishwasher-safe and covered by a lifetime warranty. --Cristina Vaamonde

Henckels’s exclusive high-carbon, no-stain steel formula. The result is a beautiful, award-winning knife that exudes elegance and is a pleasure to use. The Twin Select line contains knives for all tasks, including the following open stock knife types: parer, bread, sandwich, carving, chef’s, santoku, and others. A Higher Standard in Knife Construction

Twin Select knives are precision forged from a single piece of exclusive-formula, high-carbon, no-stain steel under the all-new Sigmaforge standard. As a result, these knives have improved quality consistency, lasting sharpness, and perfect geometry. Sigmaforge one-piece construction also provides high precision and improved stability of the blade and steel structure, thus improving cutting-edge retention for lasting sharpness. In addition, Twin Select knives use J.A. Henckels’s Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention.

New Ergonomic Handle Technology

The Twin Select series features comfortable, ergonomic stainless-steel handles that accommodate each hand size while improving function, convenience, and safety. These patented handles are hygienic, colorfast, and break-proof (USA Patent #5791055). The quality of Twin Select can be recognized by the Zwilling J.A. Henckels logo featured on the end of the handle.

I first found this item at a gourmet food and grocery store in Evanston, IL. They used this to make all of their chopped salads. It works perfectly to chop your vegetables, legumes, meats, fruits, etc to virtually as fine or as chunky as you would like. It is quick, easy to use and I love it!!

It can be a bit of a learning curve to figure out how to use properly... I know... I know... it looks like a piece of cake... twas what I thought as well... The blades are ultra sharp and if you have a diamond steel, and know how to use it, they will stay that way.

The only complaint I could have about them is that I like to protect my knives with blade guards... Well these little bad boys are a little hard to find one that fits them and protects the blade from nicking and dulling. I ended having to take it actually to the local knife place and just try out guards until we found one that wasn't too horrible.

There isn't much to say about this knife. It is sharp, sharp-looking and comfortable to use. I bought it as a stocking stuffer for my husband a year ago, thinking it was overkill, since a knife would do the job. But this mincer slices more cleanly and does it in less time than a knife. We use it often. It will never end up in the utensil graveyard.

Not much I can really say, as it was given as a gift, and I haven't used it personally. The recipient claims it is a fantastic tool, and is very sharp, and big enough for big hands. His only gripe was that the blades tend to get fresh herbs stuck between them, and cleaning them off (sticking a finger between them) is a scary job considering how sharp it is, and not something that should be attempted after a couple of glasses of wine. :-)

I bought this product for chopping herbs. Knife is incredibly sharp. But while it cuts well, moist leafy herbs get caught between the blades. And because of its sharpness, you have to be careful dislodging them back on your board for another chop. You also have to be careful how you store it, as it doesn't fit a knife block or similar storage solution. It works fine for "dry" herbs like Thyme or Rosemary, but it won't work very well on Cilantro or flat leaf Parsley. Overall, a regular single blade knife actually works better.

I bought this item because I have rheumatoid arthritis and sometimes have a difficult time chopping veggies. This knife makes it so much easier on my hands and wrists! It takes the pressure off, and for more difficult to cut items, I can easily use two hands. I highly recommend this knife!

This is definately very good quality. But I do think there is a serious design flaw. when you go to pick this up what you see is the handle with two pieces of metal and the blades look like the solid thick piece of metal. Unless you really stop to think about what your doing, your mind wants to go for the solid-looking piece of metal. MANY times I have gone to grab this knife and grabbed the blades instead of the handle due to this optical dis-illusion. My mind just wants to go for the thick piece of metal instead of the two thin pieces. Luckily I haven't grabbed it hard enough to cut myself - YET! Also, I thought the dual blades would do double duty and make chopping go so much quicker. It really doesn't for most of what I do - which are chopped salads or cabbage for soup or kale. You end up wasting time pushing the stuff away from your hand because it tends to build up between your and and the chopping blades. As for mincing small amounts of herbs or such, too much gets caught between the blades. Others mentioned that and that is not what I bought it for. But if that's what you're looking for, I would strongly suggest a single blade. In fact I will be using my single blade mincer for that as well as my salads and such. Even with only one blade it is quicker than the double blade. I debated giving 3 stars as it is really good quality and they are a good company - I love absolutely everything else I've every gotten from them. But the seriousness of this optical dis-illusion scares me and I have to think I'm not the only one who would glance at this and grab the wrong side. BEWARE and BE CAREFUL with this one.

This mincer works perfectly and is very easy to use. It is very, very sharp but if used properly that is not an issue. Very satisfied with this product.
