Twin Signature knives feature high-carbon stainless-steel blades that have been stamped from a single piece of metal and put through the patented Friodur ice-hardening process to ensure their strength. The edges are laser-controlled for consistency and sharpness, and each one is hand-honed during the production process. The polymer handles are ergonomically designed and offer a comfortable fit for mid-size or smaller hands. Bought this knife for my wife and she loves it. Absolutely sharp and high quality knife. The weight is perfect. The only down side is that the handle is plastic and kind of slippery. Other than that, it is perfect. It cuts meat, too. But do not use it to chop chickens or bones. It is not meant to be a meat cleaver.

I received this knife as a gift after putting it on my wish list and was very excited to use it. I have several other knives from Zwilling J A Henckles Twin, though some are Star and some are Signature. This is definitely the sharpest of all. So sharp, in fact, that...hypothetically if your hand were to slip while drying it, you might want to go in for...oh, say 6 stitches on your right ring finger...hypothetically. Can't really blame the knife for that, though and it's chopped all veggies it's attempted perfectly.

The handle is great. I have tiny hands (even compared to other women my height 5'3") and my husband has huge hands (6'5") and the handle is very comfortable for both us us and gives us each a sense of control over the knife.

The weight is enough to help with cutting, but not so much that it hefting it distracts your muscles from maintaining control.

It's very flawlessly constructed and as a bonus, it's pretty :)

If you want a chinese cleaver for cutting meats, vegetables, mincing herbs and garlic, or any other reason, this one will do all of the above. It as a nice handle for comfort, and a precise edge for control. It shipped alot faster than I would ave thought as well.

the knife matches the name: VEGETABLE cleaver. It is only good for vege and non-bone meat. The blade is quite thin but the steel is hard enough to hold the shape while you doing the work. It is very sharp ( I have another Henckels knives to compare to). Since it is so thin, you don't want to cut through bones to risk the blade. In addition, the handle is very comfortable. 7" is just perfect for me, and it is wide enough for me to use the blade as a pivot point while cutting, that is why I like chinese cleaver over western chef knife.

I purchased this as a gift for my girlfriend for christmas. She loved it, and I like it too. The knife is hefty, but not nearly as much so as some other cleavers. The blade is tall enough to use as a board scrapper, or for transferring chopped foods to a pan. Out of the box, it was exceptionally sharp, and has remained so, so far. We've been able to slice meat razor thin and make swift work of squash. I did plenty of research and settled on this knife, and I'm not disappointed. If I were purchasing a knife for myself, I would have bought a larger blade--I have large hands and prefer larger knives. She has small hands, so the 7'' suits her well. Last, we've used the knife to cut through small bones--chicken and similar, but nothing larger, and it's worked reasonably well. This is primarily a vegetable knife, though, watch out if you're looking for a big meat cleaver.

I have a great Chinese cleaver I got in China. A friend of mine loved it, so I looked for a replacement in the US. This is a heavier blade and thicker than my "original" style. Still, it has a nice balance and is easy to use, and very sharp. The great thing about Chinese cleavers like this one is that you can chop your veggies, then use it as a flat scoop to get all the pieces into your frying pan or bowl. Don't be intimidated by the size - this isn't for hacking at bones or slabs of meat. These are delicate knives that you can use to prep all your veggies. In China, this is the only knife in most kitchens and is used for everything. I rarely use any other knife these days. This is the only one you need for most cooking.
