Although steels often are touted as sharpening tools, few actually sharpen knife blades but do perform the vital task of realigning, or "resetting," edges, which bend when contacting a cutting surface or other hard object. Because this tool's surface contains diamond dust, it's hard enough to somewhat sharpen a blade. While using this steel won't replace a professional sharpening job, which proceeds from coarse grinding to ever-finer grinding at tightly controlled angles, it will lengthen intervals between sharpenings. This steel will also perform better than a steel without diamond dust because it accomplishes the final task of a professional sharpening, which is polishing the edge to a fine point while realigning the edge. The rule is that a steel should be at least as long as the knife blade being drawn across it, and this steel's 12-inch rod handles all household knives. This steel actually works very well out of the box. The trouble is as stated above, the diamond dusting wears off in no time at all. I used this for two weeks at my job on high volume carving stations w/2 Henckels 5-star 10" Granton Roast Slicers, & at the end of two weeks the dusting was completely gone on both sides. If you were to use this at home it would of course last much longer, but still not nearly as long as the Henckels Pro-S 12" steel I replaced it with. My advice is to avoid diamond empregnated steels all together & opt for a high quality traditional steel like the Henckels 12" Pro-S.

After having slaved away with my old steel from catering school and tried a variety of oil-stones to keep my knives with a decent edge I was really getting frustrated. While visitng family in the UK I found a "diamond" steel in a kitchen cupboard and it pretty well ripped through the job of putting an edge back on one of their knives. I resolved to get one for myself at the next opportunity. Boy am I glad that I did.

The first time that I put my regular 10" chef's knife to the steel it felt as if the blade was being "grabbed" by the steel. A few runs along the steel was all that was needed to transform my embarrassingly dull knife into one that made short work of a tomato.

The only "issue" that I have with the design of the steel is that, to my mind, the hand guard is set 90' off where it ought to be. However, if one holds the steel properly (with the face of the thumb blocking the fingers) it's not such a big deal.

All in all $50.00 exceedingly well spent.

Yup, have to add my voice to the others - the diamond dust wears off very quickly, at chich point you have a worthless hunk of metal. Sometimes the traditional is just better...
