Product Description

Amazon.com Review

With a flexible blade that bends around big bones and joints, this knife will fillet a trout but works best with poultry and meats. Classic three-rivet handles distinguish Pro S from Henckels's other quality lines. Pro S handles are heavier and its knives less weight-forward. Handles are also smaller, a feature those with small hands may appreciate. The steel used in the Pro S line is identical to that of the Five and Four Star lines. While this boning knife is dishwasher-safe, hand washing is recommended. --Fred Brack

From the Manufacturer

The J.A. Henckels Twin Professional S (or Pro S) knife series features trustworthy quality and classic three-rivet styling--it’s a line of knives admired by both professional chefs and home cooks of all skill levels. The Twin Pro S line contains knives for all tasks, including the following open stock knife types: parer, bread, peeling, sandwich, utility, carving, steak, chef’s, Granton edge slicer, santoku, and others. Twin Pro S knives are also available in a range of block sets and gift sets, to be sure that your cutlery needs are covered.

A Reliable Standard in Knife Construction

Twin Pro S knives are precision forged from a single piece of exclusive-formula, high-carbon, no-stain steel under the all-new Sigmaforge standard. As a result, Twin Pro S knives have improved quality consistency, lasting sharpness, and perfect geometry. Sigmaforge one-piece construction also provides high precision and improved stability of the blade and steel structure, thus improving cutting-edge retention for lasting sharpness. In addition, Twin Pro S knives use J.A. Henckels’s Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention.

An Ergonomic Handle for Easier Use

J.A. Henckels’s Twin Pro S knives boast a comfortable, ergonomic three-rivet handle design that won’t wear against the hand and helps to provide control when doing any cutting task. These durable Novodur handles are perfectly bonded to the full tang on each knife for stability and durability. The impeccably balanced super bolster provides weight and adds balance for safer and more professional cutting.

Product Description

In a shin bone soup the meat delicately falls from the bone after being simmered over time. But for those occasions when you have to separate meat from the bone, cooked or uncooked this knife is the ideal tool. The tip looks like a delicately bowed half spear; its point lies on the end of a straight spine where it's met by a cutting edge that rocks up to a 40-degree angle to the tip. This allows for deep accurate cuts.

5.0 out of 5 stars The best thing to happen to seafood..., June 20, 2007
This review is from: Zwilling J.A. Henckels Twin Pro S 5.5-Inch High Carbon Stainless-Steel Boning Knife (Kitchen)
I work with fish and other seafood all day long, and I've been looking for a good, flexible knife to fillet and skin fish with, to no avail...every knife I've had has either been too light, or not sharp enough...

Needless to say, I've found my knife...it is a godsend to anyone who works with fish, chicken, meats...the blade is flexible enough to make skinning fish like salmon, halibut, haddock, snapper, etc. an absolute breeze, but stiff enough to make boning chicken & other meats very very easy!

I do recommend only handwashing this knife, however...it says dishwasher safe, but I wouldn't risk the high-heat of the wash cycle...

All in all, a GREAT addition to ANYONE'S kitchen.

5.0 out of 5 stars Great knife, you won't be disappointed., June 9, 2007
This review is from: Zwilling J.A. Henckels Twin Pro S 5.5-Inch High Carbon Stainless-Steel Boning Knife (Kitchen)
We bought this knife to trim tenderloin, after being inspired by a televised cooking show. This was my first investment in a really good knife and I had a hard time believing that it would be worth the price. Once the knife arrived, I became a believer. This knife has great weight, balance, and a fantastic blade for meat (just enough flexibility to trim bits of fat and gristle without cutting into the good meat). It was worth every penny.

It's really amazing how much easier it is to work with a good professional knife. We later got a (not quite as expensive) set of Henckels and, although they are good, they are not quite as nice as this particular model. This Pro S series has a better handle and a nicer weight. If you need a good boning knife, this is the one to get.

5.0 out of 5 stars Wow great knife!, January 3, 2006
Amazon Verified Purchase(What's this?)
This review is from: Zwilling J.A. Henckels Twin Pro S 5.5-Inch High Carbon Stainless-Steel Boning Knife (Kitchen)
This is the knife that most cutlery sets leave out (oh, and the Santoku as well), and I highly recommend getting one. It really makes deboning so much easier- especially on chickens and turkeys. I deboned a turkey in no time, especially appreciating the extreme sharpness and flexibility of the blade.

I have a mix of Wusthof Classic and Grand Prix knives, but settled on this to 'match' my Classics. There's no difference between the Pro S and Wusthof Classic in terms of performance, but I preferred the lower price tag and shorter length to its Wusthof analogue.
