Best and most versitile knife I own.,

First, not sure what reviewers are talking about-- sounds like some of them received the wrong knife and did not return it, but I'll speak specifically on the J.A. Henckels Pro S 7" Santoku Knife with Hollow Edge.I own several knives, but I find that I use this one almost exclusively-- it cuts through anything with ease and minimal force-- I've used it on chicken, beef, pork chops, onions, peppers, garlic, ginger, carrots, broccoli, grapefruit... I could go on, but I suspect you get the point (and I wanted to emphasize-- these are thought of as vegetable knives-- it cuts through anything with ease, though I haven't-- and won't-- try it through bone). The only problem with it is that it cuts so well, I have to be careful not to cut things too small because its so easy to work with! I also find that things I'd normally use a paring knife for, like mincing garlic, I'm using this. Additionally, per advertisement, nothing sticks to the side of the blade due to the hollowed out grooves. Not really sure how it works, but I don't really care. This is really a superb knife and has taken its place as my main all purpose knife.

You need to make sure that you have the "PRO S" version of this knife as Henckels has several 7-Inch Santoku knives with hollow edge and they had been shipping wrong ones in the past. However, they might have straightened out their act after I reported the mistake to their customer service. So, please, please make sure you knife says "PRO S" and has a twin tribal men on the logo.As some of the previous reviewers posted (and some had been deleted), Amazon had been listing the wrong item here. Many people were purchasing the Henckels International Classic 7-Inch Santoku Knife with Hollow Edge, not "Part of the Pro S series of cutlery" as stated in the Amazon product review by Cristina Vaamonde or the "J.A. Henckels Professional S 7 inch Santoku knife with hollow edge" as stated in the Amazon product description. And even though the photo of the product shows the double Henckels men, the knife being shipped only had one Henckels man...another indication that it's not worth $74.99-$84.99 Amazon price or the $110.00 retail price it's listing. The International Classic knife can be purchased at Target, JCPenny and a whole bunch of other stores for the retail price of $39.99. If you paid $74.99-84.99 for the wrong knife, please get your money back!!!

My husband purchased the Pro S Santoku knife as a gift. I had been drooling over them for a year, but thought the expense was too much to put out "for a knife". But, since I am always cooking, and we felt it was a wise investment,I finally received one. I do not look at knives in the same way any longer.First, let me say that without a doubt, the investment is WORTH IT. I knew this the first slice I made through a potato. It was as if I were cutting through butter with a hot knife. So smooth - so quick. I was amazed. Once I got used to how sharp it is (was actually proud of my first cut) and how to handle it, there is no stopping to what I can cut. I use it on vegetables of all kinds, cubing beef, and even slicing through thick sandwiches. I make sure I use the truing blade, and it's as if I just purchased it. I am so pleased with Henckles, that I now own the cleaver, paring knife, and chef's knife. My husband and I have decided to collect the Pro S line for our kitchen. Great quality, solid handles, even weight - and swift through anything you put them to. Would recommend to anyone who is looking to invest in their kitchen's hardware. I know I will be pleased with them for many years to come.

Unlike some reviewers, I did get the Pro S knife. It is an excellent knife. Good balance, feels good in the hand, very sharp and chops wallnuts as good as anything I have used. I would highley recommend this knife to anyone who appreciates good equipment in the kitchen!

Just purchased this as another step towards the Pro S set I am building. I must say that I was extremely impressed with the ease this knife chops, cubes and dices. It is RAZOR sharp out of the box, and has the nice santoku shape.I can forsee this knife being the most used out of the entire set - very versatile and easy to use. Can't speak for longevity, but it is very well built, and I see nothing preventing this knife from lasting 40+ years. Great job on this one, Henckels!

Amazon is still pulling their substitution scam--they sent me the $40 version until I complained and asked for the correct one. Make sure you get the one that says Pro S on the blade! The knife itself is great. I haven't used it a lot yet, but I have always been happy with my Pro S set of knives and it seems to be of just as high quality.

I have this knife as part of a 15 piece Pro-S set. There are a lot of positives to this knife, and taken in context of a German blade,... it performs quite well. First, it does not have a large bolster that extends down to the blade's edge. This makes sharpening MUCH easier and allows you to used th whole blade. The tip lets you do detail work well and I never use a paring knife anymore. The blade thickness is pretty constant over the entire blade (from the edge to to the spine) at about 2mm. Its not nearly as wedge shaped as Henckels Chef knives which tend to split hard vegies rather than cut them.The edge is ground reasonably sharp from the factory, but its by no means a razor edge. A good diamond stone, paired with a ceramic or Japanese waterstones can put a much nicer edge than the factory one. So why only 3 stars? First, the blade, while thin by German standards, is postively chunky when compared to Japanese knives. Not just Shun, but more specifically Japanese knives, from Japan which have blades that are just as stiff, but literally a fraction of the thickness near the edge. This translates into superior cutting and less force needed. Second, this knife does not hold an edge for very long. I can get a shaving sharp edge on the knife, but it won't keep it for longer than a few weeks. Even when wiping dry the blade after each use and hand washing only, the edge just won't hold Thrid, its just not quite long enough. Its fine for chopping most thing, but long veggies, and meat require a sawing action or two cuts which is not ideal. Lastly, the granton scallops are useless. Other reviewers state that food does not stick to their blades. They alwasy stick to mine. In all, you could do a lot worse, but quality japanese knives can cut circles around the Heckels Santoku. If you are buying a single knife and are looking at this blade, do yourself a favor and look at some Tojiro DP knives or Hiromoto knives and you will never ever look back... and all your friends, neighbors, and family's knive will feel like cheap butter knives from that point on.

I too was sent the wrong version of the knife and in my case they would not replace it with the correct Twin, so I got a refund (still to arrive-show up on my credit card bill). It was just a waste of time and a dissappointment dealing with Warehouse Deals...

Buyer beware!As noted in other reviews, Amazon hasn't quite figured out what a Pro S series knife looks like. Instead, they sent to me a cheap Henkels International knife. Make sure they send you the correct knife!

The Pro S line is the best set I think you can buy and the 7 inch Santoku is the one I use the most. I am impressed by the feel and balance it has and it takes and keeps a very sharp edge which is most important. You get what you pay for and with the Pro S Santoku you can't go wrong.
