I own many Henckels Four Star Series knives and while I am a fan of the Santoku style knife, I have to say I am a bit disappointed with the blade life of this model. After routine use the blad has become somewhat pitted and uneven. I've never had a similar event occur with any of my other Henckels knives and I haven't subjected this knife to any particularly harsher...

I took a knife skills class and immediately fell in love with this santoku. It has a hollow and extremely sharp edge and the length allows you to smoothly rock the knife to slice quickly and effortlessly. The granton edge helps keep food from sticking to the blade while slicing and the knife itself is well-balanced with a solid bolster and tang. The wide blade is also wonderful for scooping up from the cutting board to bowl or pan. This knife is going to be my workhorse, no doubt about it!

Because it's expensive, I feel that I should warn that if you cut on glass, marble, ceramic or other hard surfaces, you'll be wasting your money, because this knife edge will be destroyed by those. It should also be honed on a fine or smooth steel before each use to keep that razor edge straight and then professionally sharpened once or twice a year.

I highly recommend this knife -- very good quality.

This is a awsome knife. Super sharp. Great weight and easy to use on almost anything Veggis, Seafood, Sushi, Beef etc. Cut Salami or Carrots paper thin. I bet you could probably take care of a Coconut with this one! The slices fall right of the side, no more sticking to the blade! Great for chopping as well. I have almost all the 4 Star Henckels and I love them all. I can highly recommend this Knife. The same Santoku knife also comes in 5 inches lenght (for ten dollars less) in case you are interested.

Cuts everything from tomatoes to squash easily -- if you have a lot of cutting to do, less fatigue on the hands. Great for use as a cleaver or a slicer. Multi-use -- I have had my Santoku for almost a year, I love it... I got the set with the 4" paring knife, too. I am to the point I only use these two knives in my kitchen for prep work.

Worth it's price.

Purchased this knife to round out a set of other four star knives. As a Santoku, it has the classic rocker shape, long bevel on the cutting edge, and plenty of finger clearance. Not sure how effective the kullens are. As a Four Star knife, it is thinner than others in the set and has a more abrupt front bolster, both due to the Santoku pattern. Also, when it came in, the back edge and the edges of the bolster were very sharp and uncomfortable to use. I burnished them off with my sharpening steel to make the knife comfortable to use. Now "tuned" it's an excelent addition to my set. Selected the 7 inch over the 5 inch on a hunch and glad for the size.

I've owned Henckels for years, regularly defaulting to my trusty 8 inch Chef's Knife (which I thought was extremely sharp until I used this knife). However, after purchasing the Santoku, I find myself using it for everthing. It is the sharpest knife I have ever used. The indentations on the blade make it ideal for chopping things that normally stick to other blades (cheese and veggies). Although the blade is thinner than my other Henckels, it still feels very sturdy and substantial when held in the hand. I would highly recommend this knife to anyone who is serious about their cutlery and plans on taking the necessary steps to maintain this great knife.

This is a great knife for chopping and mincing. The knife is well balanced, and is made of good steel, like all other Four Star knives. The rocking motion with the blade is very natural and easy to learn, in comparison to the standard chef's knife. In addition, the long, flat blade is excellent for scooping the chopped material up.

The steel in the Four Star series is very good at holding an edge (compare to the Rachael Ray/Furi reviews) My older knives are used a great deal and have kept very good edges, two or three strokes on the steel and they are good to go. Out of the box, the edge is like a razor.

The Four Star series is good for people with large hands. If you have smaller hands, the Pro-S knives are the same steel with a smaller handle.

Four Star knives have a solid well balanced feel. I am not sure the five inch version would achieve the same cutting in this style. Not flashy, but a good solid kitchen knife. I think this may replace my chef's knife as my primary tool.

I have owned a set of four star Henckels knives for more than a decade and bought this Santoku to complement the set. All of the knives have been used multiple times daily and performed well with basic care including hand washing, hand drying, and approximately monthly dates with a matching sharpening steel.
Advantages of the Santoku over my chef's knife are the ability to chop large vegetables while maintaining good control over the wide blade and the hollow ground surface easily releases foods that would otherwise stick to the blade.
I still prefer the chef's knife for chopping smaller things, like herbs, where the deeper drop angle to the point allows more rocking motion.
This knife has the same high quality as the rest of my set and I anticipate that it, along with the others, will be part of my kitchen for a lifetime.

We have been using the Four Star Santoku knife, as well as five other Henckels Four Star knives, for over a year.

Pros - All hold a sharp edge, have good balance, are light weight, have a comfortable grip, and sharpen easily.

Cons - Should be hand washed (if hand washing is an issue for you)

Overall - The Henckels Four Star knives are high quality cutlery. And, the Santoku style chef knife has replaced our regular style chef knife as the most often used knife in the kitchen

I had always wanted one of these knives, and finally caved in and purchased one. I cannot believe how quickly I can cut up a chicken! It takes one tenth the time as with my other "sharp" knives. And, I was able to easily cut through beef ribs to separate them before cooking. If you are tired of wrestling with difficult meat joints, this is the knife for you! I give it 5 stars!

I love this knife. It makes slicing of anything so easy. The knife feels a little heavy, but I am all right with it. I find myself taking this knife out to slice everything. I have actually become a better slicer, since using this knife. I would recommend this knife to anyone who wants a good quality knife that is not too expensive.
