4.0 out of 5 stars Not for everyone , but the best
I am an assistant to an executive chef and instructor at one of the top ten culinray schools in the country. 1.0 out of 5 stars Great knife, lousy handles
This is just a quick warning about the Twin Cuisine design for all those that are interested.

Four star for the cutting ability of the knife, One star for the handles,(Because you can't click no stars)

I have been involved with the restaurant industry for some thirty years now as a Chef, management, designer, contractor etc... So I know good from bad...

4.0 out of 5 stars Not for everyone , but the best, January 3, 2007
This review is from: Zwilling J.A. Henckels Twin Cuisine 8-Inch Chef's Knife (Kitchen)
I am an assistant to an executive chef and instructor at one of the top ten culinray schools in the country. Althought I am not a professional myself, I find that using top equipment makes the differences. This knife speaks for itself. The edge has remainded true without a lot of fuss. The ease of use is something else. If used correctly you can slice and dice all day. The only drawback is the weight. Some might fine it a little heavy at first, but stick with it, the wait will be worth it. Excellant knife

This is a great knife! Very well made and does the job! I had the Wusthoff top of their line chef's knife and exchanged it for this one. This knife to me was sharper and better balanced. And this style handle fits my hand well. If you have a larger hand you may find this grip more comfortable. Although I do own a few hand forged Wusthoff knives, in my opinion Henckels makes a better knife.

5.0 out of 5 stars great for tall women, March 1, 2007

I am 5'10", with hands to match. Knives with the traditional handle are just too small and my hands cramp up if I have to use them for a while. The handles on these are thick and solid and ergonomically curved. Great for a woman with larger hands or your average guy. Wouldn't recommend them for a small woman because of the handle size and because they are a heavier knife overall. My only negative with these knives is that they don't have an ID on the end of the handle the way another company (is it Wustof?) does, which makes it easy to find the knife you want without pulling them out to check.

5.0 out of 5 stars Outstanding, impressive and shart, March 4, 2006
This review is from: Zwilling J.A. Henckels Twin Cuisine 8-Inch Chef's Knife (Kitchen)
I have had many types of knives in my past but none this heavy, sharp and useful. The handle is both ergonically useful and very beautiful (a nice combination). This is impressive to the look and touch. This is staying sharp through many tough jobs.

5.0 out of 5 stars Envy of the staff, December 19, 2007
This review is from: Zwilling J.A. Henckels Twin Cuisine 8-Inch Chef's Knife (Kitchen)
This knife has become the envy of the entire kitchen staff. I work in fine dining and this knife does it all. It keeps a shaving sharp edge. Be sure to pick up a Henckels steel and keep it that way. The balance is fantastic and the handle is the best design I have ever used. And it is by far the most comfortable. You'll be looking for things to cut with this knife. Next on my list is the serrated utility knife. You won't regret this purchase.

The handle on this knife is particularly comfortable. Out of the many knives I've tried this is one of the most comfortable.

5.0 out of 5 stars Cutting perfection, December 31, 2007

This 8" chef's knife is one of the finest on the market. The grip is well contoured and very comfortable in the hand. The blade is razor sharp and thanks to a special process of ice-hardening it should remain so for quite some time. It's also possible to buy the J.A. Henckels Knives 10" Sharpening Steel 32565 260 to help retain the edge almost indefinitely.

The balance is superb and the curved blade is perfect for rocking back and forth as you slice vegetables. This is a fairly heavy knife, however, and for some tasks you might want a smaller, lighter knife. That's not really a negative since any kitchen should have a good variety of several knives to choose from.

There are many knives available for a lot less money than the Twin Cuisine series. Unfortunately, cheap knives will never take and hold an edge like this one will. Try this knife just once and you'll be hooked on Twin Cuisine for good.

This is the workhorse for your kitchen! Sharp, well balanced and excellent grip! I'd love to have the 12 inch version of this knife but they don't make it!

I LOVE this knife for cutting meat. A friend who is a chef told me to get this brand of Henkels and it is an awesome knife. I've had it for a month and love cutting raw chicken or other meat.

5.0 out of 5 stars Rock Solid, September 2, 2010
This review is from: Zwilling J.A. Henckels Twin Cuisine 8-Inch Chef's Knife (Kitchen)
I've had this knife for three years, and I've only had to have it professionally sharpened once. I have used it in two high volume restraunts and it has performed better than my coworkers' Shun and Global knives. For the money, you gotta take this knife home with you, whether you work in a restraunt, or just need a great knife at home.
