Marvelous knife!!! Well worth the money. Extremely sharp and well balanced. If you have a larger hand this will fit your hand well. I had this in a different style handle, the classic grip and exchanged it for this handle style.I cannot say enough about this knife! I use it far more than my classic chef's knife. It takes just a few minutes of getting used to how it handles. It can be 'rocked' like a chef's knife, just not quite the same way. Once you get used to this you'll love it. It cuts very cleanly and smoothly. Treat it properly and it will last a lifetime. A well made knife is an essential cook's tool. And this in my book is one of the best made out there.

My wife and I cooks alot and we have been searching a 'perfect' all rounded knife; We found it THE PEFECT knife! We replaced our entire 9-piece knives set with this line of Henkels- Henkels 7" Hollow-Edge Santoku - Henkels 5" Hollow-edge Santoku - 4" Parer - Bread knife Pros: Sharp, sturdy and precise. No more eeky food stain and crumps get in between the handle and the blade. Cons: It takes a while to get used the 50/50 blade and handle weight distribution but once you get used it, makes other models or make obselete.

love the blade. the handle, not so much. got the 2 knife set about a year ago (this one w/ the paring knife.) the blades are great, super sharp and cut well. however the handles on both knives cracked in several places after only a few months of TLC care. (hand washing only, handled carefully). I love henkel knives and have used them for years, I will just get them with a different kind of handle in the future. also with this particular model it took me a few weeks to get used to the handle-heavy balance.

A Few Drawbacks But One of My Most-Used Knives,

I have, and had previously, quite a few Henckels, Wusthof and Shun knives. This Twin Cuisine Santoku remains one of my most-used knives, close to a decade after purchase. The blade is sturdy, comes sharp and is easy to keep sharp on your own (I use a Chef's Choice 130), unlike some of the more delicate Japanese blades. The Santoku design does seem to work to resist drag and I like the broadness better than a standard chef's knife. The handle fits comfortably in your hand and the length of the blade is also ideal for most tasks, which is why I reach for this knife quite frequently. (Until recently, I'd say it was my most-used blade.)Now for the negatives, the Twin Cuisine handle design is heavy and can be slippery with wet hands. Also,over time, the ebonized wood that surrounds the stainless steel in this handle is subject to crazing with repeat washings, even if done by hand. But the biggest downside is that the weight of this handle, which makes the knife feel heavier than I'd like and not fully well-balanced. It's something I get to used to relatively quickly with use, but I'm always surprised at the heft when I pick it up after using my lighter Shun or other Five-Star Henckels knives for a while. I've got quite a few of those Twin Cuisine Henckel blades and the slippery and heavy handles are the biggest drawback on them all. While this is no longer my most-loved/used knife (this one is my current fav: Shun Classic 7 1/2 Inch Wide Santoku), I have nothing but praise for Henckels hardware (still the most common brand in my knife drawer) and the company itself. On the few occasions I have needed to have warranty service or replacement, Henckels has been incredibly easy to deal with and has always gone above and beyond in terms of customer satisfaction. Can't say enough good things about the service level, which seems rare nowadays.

This is just a quick warning about the Twin Cuisine design for all those that are interested.Four star for the cutting ability of the knife, One star for the handles,(Because you can't click no stars) I have been involved with the restaurant industry for some thirty years now as a Chef, management, designer, contractor etc... So I know good from bad when it comes to restaurant products. About four years ago I decided to purchase a new set of knives. Henckel being one of my top choices, based on previous experience and ownership. I settled on the Twin Cuisine because I liked the larger handle and overall weight of the knives and the look. Full length tang, no rivets and a more robust design of the handle. I purchased from various vendors on Amazon a compliment of around nine knives of various lengths and cutting styles. I also got two sets of the Twin Cuisine Steak Knives. Speaking for the knife, (cutting portion) they are a great set of knives. They keep there edge, (as long as you hone them) and I think I have only had to sharpen them a few times over the years. Now for the handles. Every one of these knives the handles are cracked, not cracking.... cracked. From my 10" chef knife to the steak knives. There is definitely a flaw in the plastic used to mold these handles. I have found references on other forums about this problem with the twin cuisine so buyer-be-ware. Although they are warrantied for life the hassle is you have to send them in one at a time to Henckel, which frankly I have not taken the time to do, and it can take them up to eight weeks to deal with the warranty.

I bought this as a birthday present and have to say it is an amazing knife. I've always been a huge fan of hollow-edge santoku knifes, I use them for pretty much everything. This one is made in Germany (I believe all of the Zwilling knifes are, but the regular J.A. Henckels are made in China... which I have used a few of the nicer ones and they are not bad knifes either, just not quite as balanced as the Twin line).I really like the ergonomics and balance of the Twin Cuisine line, and I like the stamped end on it. I also like the Twin Star II line, it's a toss up really. You can cut effortlessly with these knives (between how sharp they are (and stay!), the balance and the 'hollow' channels prevent what you are cutting from sticking to the knife).

I have a pretty full set of Henckels Five Star, but since buying this knife, if I only had one knife, this would be the one I want. I have found it to cut everything well, from cheese to meat, but it excels at chopping and slicing.I like the handle even better than my Five Star set, and the weight and heft of the blade really make cutting large or chopping large quantities of items like onions or potatoes simple and easy -- it really saves effort when preparing meals for large groups. The Santoku blade makes paper thin slices of meat, fish, cheese, or potatoes or onions a breeze! If there's a flaw in this knife (I have dropped it a couple of times), I cannot find it. As do all Henckels, it comes with a nice edge that is so easy to maintain, and balances toughness and sharpness with outstanding resistance to staining. HIGHLY RECOMMENDED.

This was my first twin cuisine knife and my first santoku.I have to say that I'm very impressed with it. PROS -heavy (really helps when cutting) -very good for mincing -great for sushi but this thing cuts anything -strong -beautiful -durable -comfortable handle -the weight makes it great for handling bigger jobs or for cutting firmer vegetables (well for me at least). CONS -the balance is nonstandard for me (the handle is heavy)....don't know if this is just because it's a santoku (are they all handle heavy?). Overall, not a big deal just takes a bit of getting used to. -the handle has cracked on the top half (hairline but there) -- never been dropped or machine washed. I don't know if there's a warranty item on that, I'm going to check. If there isn't I'll probably wind up getting the PRO S line or another more traditional line (that's why it got dropped on star) I've always handwashed this thing. |
