5.0 out of 5 stars Great for big meat
This is an excellent knife given the right conditions. If you find yourself cooking large roasts of any sort, this is the knife to carve with.

This thing goes through prime rib like no other knife I've ever used. You want paper thin beef? Done. Big honking thick slices of beef? Done.

2.0 out of 5 stars Disappointed
This is the first Henckels knife I've been disappointed with. It's just not as impressive as the rest of the four-star line. It's OK, but for the price, I'm not happy. Bottom line, it's not sharp enough, not versatile enough, and not worth the price. It is an adequate slicer, but not the over-the top quality of the rest of the line, of which I am a huge fan.

The one drawback of this knife is when you are slicing near bones. It's a pretty stiff knife and very long with a blunt tip. If you want to get the tender little bits from the bone, get another knife out, or plan on getting your hands dirty!

5.0 out of 5 stars it replaces my electric slicer, July 25, 2002
By A Customer
This review is from: Zwilling J.A. Henckels Twin Four Star 10-Inch High-Carbon Stainless-Steel Granton Roast Beef Slicer (Kitchen)
I eat a lot of Italian cold cuts like prosciutto, which has to be sliced paper thin. Until I got this knife last year, I have been using an electric slicer (a commerical one like those in a deli) to do the job. With some practice, I can slice ham with this knife almost as thin as the machine and it is a lot easier to clean it then an electric slicer. I also use it to slice meat and fish often. The rounded tip makes it easy to work with, at least for me, because the sharp tip of a typical 10 inch slicer makes me nervous. Lastly, the blade is quite flexible and it took me a little while to get used to it.

The first time I used this was to slice soporsato for the Superbowl....Excellent knife! I was able to slice this cured sausage diagonally, and with thin, even slices which can be really difficult. Love this knife....I look forward to many years of use with this knife!

ONE OF THE BEST KNIVES YOU WILL EVER OWN. BECAUSE OF THE LARGE SIZE AND THE SHARPNESS OF THE BLADE YOU HAVE FULL CONTROL WHEN CARVING. REMEMBER, A SHARP KNIFE IS A SAFER KNIFE. WITH THIS ONE YOU CAN SLICE ANY THING AS THIN AS YOU LIKE. PRICE WAS GREAT AND AMAZON'S SHIPPING AND HANDLING WAS SUPER.

this is is really nice knieve and yes I can cut cheese with it so thin, awesome. Actually you can cut all very thin with a hard texture like parmesan, parma, half frozen stuff like tuna,

but don't try to get thin slices from warm filet! it just don't work. It's not sharp enough. So freeze it a little and then you can cut it thin enough, but its still a nice knieve, but you must get it way sharper!
