I bought these specifically for cutting whole chickens in half, and they perform very well, are quite sharp.

First of all, i dont use my zyliss sprin assisted shears for cooking but for artwork, so this is strictly a review for the use of these shears on paper and cardboard related products. I got mine at a tag sale, but "new" and had no idea they had other intended uses.

That said, the handles are bulky and if you forget to slip the "on/off" switch, the scissors won't open. This is a safety feature that is nonetheless useful as it no doubt prevents injury: these shears are sharp, despite the thick blades. They will cut anything made of paper or cardboard up to 1mm thick mat board, which i just finished cutting into trading card size pieces with my three year old Zyliss shears. The tips are rather blunt, however, so these are for heavy duty work, not for detail cutting. As for the "spring-assisted" mechanism, if you open the shears too wide, you lose the spring action, which another reviewer explained is actually a piece of flexible steel that pushes open the shears with lever action. I have not found this a problem, cutting only papers and cardboards, but for other purposes it could be.

As for plastic, no, these do not even cut a thin plastic bag, so do not expect them to be truly "all-purpose" but for cutting paper products, they are a good heavy duty scissors that so far have lasted three years without needing sharpening or any sort of repair or maintenance.

Turkey backbone? Not a problem with these kitchen shears! I am a lazy cook and have a small oven and needed to maximum space. I found a recipe for a butterflied turkey (spatchcock) that would allow me to NOT lose a rack on Thanksgiving Day. The recipe required me to cut out the backbone and then crush the breastbone of the turkey. These shears easily cut the back of a 17lb turkey. When I was done, they came apart easily for safe sanitation. I actually has more trouble trying to get them together. They are easily sharpened because of the ability to come apart. I love them and they definitely did a great job for me.
