how long does it last? For anyone who has purchased this, how far "out" was the expiration date from the time you bought it?

Once you open a jar, how quickly should it be consumed?

The one I bought 4 yrs ago says the shelf life is 3 yrs; But it still smells good, not sure though if the quality is still ok.

coconut oil is very stable and will last for a very long time well over 1 year.

This is not a complete answer to your question as I have only recently bought this product, but I will say that regardless of relative stability of coconut oil, oils will go rancid (break down) over time. Rancidity is slowed by lower temperatures, thus I keep my jars in the refrigerator.

Mine was packed in May of 2012 (about a month before I bought it) and the exp. date is May 2014. So I still have quite a bit to go before the expire date. I should be done with it by then.
