The cooking surface is made of hard anodized non-stick. On the box it says BPA Free,(non-toxic) and it's also in the description on the Cuisinart website. That was a big concern for me also. They really should have included BPA Free in the product description on Amazon.

It adjusts to any thickness! If you are cooking more than one steak or chop, they should be boneless and uniform thickness. When we cook boneless chicken breasts, we pound the thicker part down a little to make them more uniform. But you can cook 1" steaks or bigger, if you like! We love it!!

My product has metal locking clamps, and the release buttons appears to be metal. The top part is brushed stainless steel or aluminum. The plates float on spring loaded pegs. I have used this product over 50 times, and nothing has melted as of yet.

8, 4 on each side. Pour the four on the top side first as they seem to cook a little slower than the ones on the bottom side ! I/we LOVE this appliance, we use it every day for something ! Grilled Cheeze, WOW ! !

If you are asking if you can control the heat separately, the answer is no. Upper and lower plates will have same temperature. This Griddler is one of the BEST purchases I have ever made. I use it on a daily basis.

I've used bakery Polish rye bread and "rustic peasant bread" with no problems. The top doesn't push down hard. I don't buy any really soft white bread, but I don't think it would smoosh.
