Will the bayonet mount be strong enough to hold a 300mm f2.8 telephoto with 2x extender? My D7000's bends when I mount that lens.

When you use long telephoto lenses, you hold the system by the lens not the camera body. When you mount the system on the tripod, it is mounted through the lens. Therefore the answer to your question is yes, it is strong enough for the tele-converter and the D7000 body

I think most importantly, if you haven't already, you need to get the MB-D15 Battery Grip that goes with the D7100. Once it's attached to your camera the handling and balance should improve dramatically... :)
