This is the pasta I use for all my noodle and pasta dishes. It always cooks up just right and can't be overcooked because of the amount of eggs in it. I usually buy it at the health food store or gourmet supermarket when it's on sale, but now I can get it on Amazon anytime at the same price delivered to my door.

I've bought the packs of BioNaturae Tagliatelle and the Pappardelle (wider) several times from Amazon. They are nice noodles, and have much more character than most plain pastas.

The texture is slightly coarse, and the taste hints strongly of egg. Good with red, white and other sauces. Also makes a great kugel. I find that a pack serves around 3-4, depending on the dish. (This means that I use around 2/3 of a pack for dinner for two, so I often have a partial pack in my pantry.

Note, of the several times I have bought, the have suffered various offenses during shipping, so sometimes the nests of pasta are totally intact and long, and sometimes they are relatively shattered, but it turns out not to matter a whole lot when you are eating. Broken pasta is still plenty long, and fine for eating.

I like the wider pappardelle more, as they have a more rustic feel.

AN excellent, well made egg pasta that stands up to all types of sauces and dishes.
It works well with traditional red sause as well as variations of cheese, vegetables and oils. Use it as a dinner side staple or all by itself.

I never had high hopes for the organic products that I bought...very often flavorless and grainy textures. Boy, were we surprised by Bionaturae!!! The texture, flavor and cooking are perfection. I have already ordered the other pastas...parpardelle, penne, etc. I find that you need to add about 1 minute more to the cooking time, but you get scrumptous results. My husband, a typical spaghetti man, has now come up with recipes for the thicker, noodle like pastas and is a convert!! Wonderful products.
