Salsa: one sm-med onion, cut in large chunks, 1 handful of washed and dried cilantro, 1-2 hot peppers, cut in chunks, 1 large can diced tomatoes, 1 clove garlic, optional, fresh lemon, optional. Place onion in carafe, chop coarsely, add cilantro and hot peppers, chop into small pieces. Add 1 cup of the tomatoes, drained (place the rest of the tomatoes and their juice in a 4-6 cup bowl). Add garlic if desired. Blend briefly, mixture should not be smooth. Place mixture in bowl with tomatoes, stir. Add juice of 1/2 a lemon (optional), stir. Let salsa sit covered in the fridge for 30 min to develop favors, or dig in right away.
Crust for cheesecake: 2 cups broken cookies, and/or sweetened breakfast cereal, or combination of the same. 2-3 tablespoons melted butter. 1 teaspoon cinnamon (if using chocolate cookies, substitute 2 t cocoa powder for cinnamon. Blend cookies/cereal to small crumbs. Add seasoning. Drizzle melted butter over crumbs. Blend just until mixed. Pat mixture into the bottom of a spring form pan or pie plates, chill until firm. Fill with cheesecake batter of your choice. This can also be used as crust for an ice cream cake.
