It was recommended I buy this reference to support my culinary classes at our local college. I've purchased many references & textbooks in the 2 year program. This is 1 book that I continue to use on a weekly basis. I use it when I'm not sure of a certain ingredient, substitution, cut of meat, etc. I also use it for "fun" things like what are some of the itmes in the "Chopped" TV show boxes. Worth the money & space on my bookshelf!

Appears to be a very thorough reference.
My complaint is that it is only offered as a paperback and the quality of the papers and binding is mediocre.
Thick paperbacks tend to fall apart easily. I want my reference books to last.
But the print is clean and easy to read.
I like that the main entries are bolded and the text indented. This makes for quicker scanning.
The Commonly Used International Terms chart is nice as well.
If this was offered as a quality hardback text I would upgrade my rating.

This is nice if you are a culinary student and want to impress your teachers! But no really, if you are serious about cooking, not just someone who cooks because they have to, you will enjoy this book.
